    Eggless Marzipan Recipe Part 1 | New Kneading Tip | White & Smooth Marzipan | Christmas Sweet
    Hi
    Welcome to my Channel.
    Ingredients: (200 ml measure cup)
    300 Gms Cashew Nuts / Almonds (skinless)
    550 Gms Grain Sugar (can add more or less as per your liking)
    3/4 Cup Water (150 ml)
    1/2 Tsp Almond Essence
    1 Tsp Rose Essence
    Food Colours (Powder, Gel, Liquid)
    You Can make half of this recipe too, just divide all ingredients into 2.
    Remains fresh at room temperature for 15 days
    Can be used for Christmas fruits, moulds, Easter-Eggs, Favours, Covering Cakes, Cake Toppers.
    Net Weight 880/- gms approx

    I made this today as u said ..omg. the marzipan came out like a pro.. thats anyother thing moulding took forever :) but the marzapan was a breeze. Took around 30 min for full portion (300 grms cashews) .. Special thanks to my friend for helping :) and off to you! Happy Easter!

      Yes, you can reduce and use atleast 400 gms of Sugar, so that it helps in binding.

    Hi, thanks so much for sharing.. looks like this year i will get this right :) but can u tell me if i can use same quantity of cashews and sugar? i just feel almost double quantity of sugar maks the marzipan too sweet for my liking. Will it still come out well ? like ur result.

      You can reduce 50 gms of sugar and take 500 gms to lessen the sweetness.
      Taking both cashews and sugar same ration will be less sweet, but it won't combine well and come together as a dough.
      Try reducing a little at a time.

    Can I substitute almonds with almond flour and would this be the same weight or more then when using almonds?

      Yes Definitely you can substitute cashew nuts with almond flour. Everything will be the same, add the same amount of Almond flour (300 gms) and stir well. This will make the marzipan much quicker and tastier.
      Process and testing will all be the same ok.

      Yes yes, you can. knead it soft and roll it over a plastic, butter paper or silicone mat and then just wrap it around the cake. Even I do that for communion cakes as well.

    What is the substitute for a silicone mat?

      Use a thick plastic sheet, or just pour on a tray and knead it when you are able to touch it. Hope this helps

    How many days you can store it in fridge

      Home made Marzipan remains good for a month in the fridge. Though it can be kept for more longer, it starts getting dry.

    How long can you keep it at room temperature? If we make hollow Easter eggs will the shells get hard when left to dry

      Remains fresh at room temperature for 15 days. It would be difficult to maintain its shape if kept hollow. its Best to use chocolate for hollow Easter Eggs. Stay Tune will be uploading a video on Easter eggs soon.

      After you have made 2 halves of the easter eggs (hollow type) just coat the insides of the marzipan shells with melted white chocolate and let dry and then join the 2 halves. This way it will remain firm. Hope this helps.

      Try to use good quality cashew nuts, that the problem for oily marzipan. Use Fresh and good Quality of cashew nuts. All the best and do let me know how it turns out for you

    What to do if the marzipan becomes a bit sticky & soft?

      Put back on fire and stir for some time more and let it dry up a bit. Then remove on plate and spread and let cool. As it cools it will dry up more. Then knead and colour.
      Don’t panic, it happens if the marzipan is removed earlier from fire.

      100 Gms Cashew Nuts / Almonds (skinless)
      180Gms Grain Sugar (can add more or less as per your liking)
      1/4 Cup Water (200 ml measure cup)
      1/4 Tsp Almond Essence
      1/4 Tsp Rose Essence

      No Grated cashew nuts cannot be used here, you won't get a smooth texture to the marzipan. You can use cashew nut powder instead.

      I have used Gel Food Colours,. You can use liquid food colours too. Its easily available in shops selling bakery and chocolate accessories and online too.

      If its too sticky and not drying up put it back on fire and stir in for some more time.
      If its not too sticky then, spread the Marzipan and let it dry up over night.

    Doesn’t the cashew release oil ? I don’t see much oil

      When the cashews are soaked and ground, it does not release oil, as compared to using cashew powder directly. Also it depends on the quality of the cashew nuts

      Remains fresh at room temperature for 15 days in airtight box. You won't have any problem in kneading this marzipan and Moulding it into shapes. After Moulding into shapes dries quickly in half an hour

      After removing it from the mould just leave them on the tray, they will dry from both sides and then you can store in air tight box. You can place a butter paper inside the box and then puts the marzipan, though not required.

      Spread the mixture on a plate / thali and let it dry up a bit and then knead into a ball.

      I think you had kept it too long on the fire.
      Just knead it with Rose Water till becomes like a dough again.
      Don't worry it will be good again.

      50 gms Marzipan Easter Eggs will cost approx. 100 Rs each also it would depend in the area where you stay.

      did you use the quantity of water and sugar mentioned in the recipe? I have been using this recipe over past 30 years. Its my business recipe and it always turned out good.
      Never mind try it out again and i'm sure you will get it right.
