Love the idea of the glaze on the fruits they look amazing can mk the leaves of fondant just a suggestion instead of the foam leaves because they r not edible the marzipan looks yummy the kids might eat the leaves also😂

the marzipan does not dry fast, you can work with it and let the individual fruits dry. if You are talking about the Neutral gel it gets dry after some time and does not stick.
You can store Marzipan in fridge for atleast a month. But it will start sweating and get a bit sticky once you get it out from the fridge. Then it will start drying out again. But then kneading it into a dough might be troublesome. If it dries out use rose water and knead it again.
