The reason it didn't thicken is because cornstarch needs to be brought to certain temp to activate. Just bring it to a boil for a couple of minutes, and it will thicken. It doesn't take long.
Happy Labor Day 🇺🇸! Don't worry if it didn't thicken enough. I love to dip buttered bread in mine and any leftovers tomorrow will thicken if you reheat it in the microwave. That's actually how you can do it next time if you like. Simply put your cornstarch in your cold water and then add a little broth to it and microwave it for a minute or so then mix it into the rest of your stew. It makes it a little easier to control that way you don't use too much. 😊❤
This looks delicious to me! I’ve never flavored this combination this way but why not? It’s meat, potatoes and veggies! When it's been in the 80s and suddenly it drops down to 50s all day and low in 40s at night then yes it feels like Fall is here early in August! Even though we're used to alot colder in WA state.. but at the first cool down you feel it. I have Alaskan friends say the same thing.
Stew? I'm not so sure about that, the liquid (thin and watery at that) to solids ratio leads me to say this is soup. Also, I suggest searing the meat, it adds flavor and seals the juices in...that and looks better.

I add the tomato, potatoes and carrots until after the beef is thoroughly cooked in a cup of water with onion and celery. The potatoes and carrots will add enough rye if you cook them long enough. Then your stew can be gluten free. I would use gluten free taco season. These thoroughly cooked ingredients over gluten free corn bread are preferred by my family.

I have used instant potato flakes to thicken beef stew before. It worked good.

Warm water add to cornstarch then add hot water, stir. Stir hot water,cornstarch mixture to Hot beef stew.
