Once dried, do I store the noodles in the fridge, or room temperature in airtight container is also okay? Thank you so much for making this video and for your time!

In my city, I can buy vegan ramen OR gluten free ramen, but nobody has a dish that is both. I would also LOVE to see a gluten free ramen noodle video. All of the rules of baking change as soon as you try to make something gluten free. If you're looking at recipes as starting points, the most successful ones tend to have 1/3 of the volume as a starch (tapioca, corn, or potato) I have made a sort of udon noodles with 33% glutinous rice flour, 33% potato starch, 33% brown rice flour, boiling water, salt, and some Xantham gum. Millet or sorghum flour would also work in place of the brown rice flour.
Amazing job! Only thing is…I would have used sodium bicarbonate instead of just baking soda. Just put the baking soda inside an oven on I believe 275 degrees (probably wrong on the temp) for about an hour. Wait until the baking sodas reduced to 1/3 of its weight and then use it in your Kansui. Other than that I love this technique…amazing job! One of the beSt Professionals
@@onpoin Speaking from experience and research, you most likely used way too much baking soda. It should only be 1-2% of the total amount of flour. Also you didn’t turn it into sodium bicarbonate so I’m sure the ratios are different as well. Check out @wayoframen on TH-cam. He has exact measurements and has video guides on how to do it. If you use too much it will reap more of the effects that the baking soda has on the noodles but it will also smell and taste like baking soda too. So be sparing with it and measure your ingredients. It’s important.
@@onpoin I prefer to use potassium carbonate anyways. A firmer noodle texture. It also depends on your hydration content of the noodles as well. So I highly suggest to study it more. Ramen noodles aren’t as easy as some videos suggest it to be. You make your own perfect noodle. This video is showing his favorite noodle for the dish he is making. Have a good one

I thought only baking the soda works (for alkalinity), never knew there's a short cut. How was the texture of your noodles? I made the other day with just flour and water, added too much water and it wasn't bouncy at all.. But the fun is the learning process too.

@@YEUNGMANCOOKING It was epic. It was so important to flat the dough first before you ran through the roller. The dough was so dry and flaky. I thought it wouldn't come together. But it became so soft after the rolling process. I made tantanmen with spicy beef. This will also be my receipt to go for ramen. I made double and my families ate all!!

I do not own a pasta maker and I am a broke ass college student; however, I do intend on doing it the old fashion way and use a knife to chop the noodles thinly. I don't mind doing the extra work as long as I can have a bowl of ramen 🍜 for a cheap but healthy price 😊

Lol totally okay! I often use store bought noodles. It’s really fulfilling to make your own noodles but yeah it does take time and effort ☺️ I got the standmixer when it was on sale so I was pretty lucky but if there is one appliance to splurge on I would hands down say save up for a vitamix. That machine is next level 👨🏻🍳🙌🏻

Hiya Ofelia 🙌🏻 hmm I actually tried it with white flour and although the noodles looked fine, it really didn’t have that nice elasticity as bread flour ☹️ maybe you’ll have more luck? I used the same proportions. 🍜let me know how it goes!
Great German stainless steel... being a German myself I know. I live in New Zealand and very expensive here... what chefs knives do you use? I have Wuesthof and Zwilling... tasted the Chilli oil made with the rice bran oil today in my bowl of Ramen and it was great
Technically it's the gluten that gives your noodles elasticity. The bicarb gives it the texture. ProTip: bake your baking soda for like an hour, or cook it on the stove, stirring constantly. This will take away its water and transfrom it into Sodium Carbonate which will make your noodle texture even MORE velvety.

Definitely! A lot of work tho 😅 you’ll need to roll the dough fairly thin and even depending on the type of noodles youd like to make. However, I have seen manual pasta rollers for around $50cad 😇 not too bad

The texture is pretty elastic ☺️ I tried it with all purpose flour and it was as satisfactory. I found that bread flour was much more successful

Do they taste the same as when you use Baked baking soda??? I was told that BAKED baking soda is a must but your method is much easier...Can I use semolina flour, black beans flour or any kind mixed together with all purpose flour to make ramen noodles out of them... please want to know

I have yet to try with GF flour - wondering if a 1-1 substitution would work 🤔
I do not own a pasta maker and I am a broke ass college student; however, I do intend on doing it the old fashion way and use a knife to chop the noodles thinly. I don't mind doing the extra work as long as I can have a bowl of ramen 🍜 for a cheap but healthy price 😊

I would imagine you could use a dehydrator to expedite the drying process.. do you have any experience with this? Thanks, great video!
I believe it probably would! I used to have one but don’t any more ☹️ perhaps a fan would also help but I haven’t tested it

I was thinking YES I NEED A KITCHEN AID WITH ALL THE ATTACHMENTS NOW.... then I came out of my excitement to realize that they are BIG time expensive and NO I probably will never have one, but never say never, right?!!!! BUT as I mentioned, I was thinking that you would be a GREAT ambassador for KITCHEN AID if you don't already have a deal👏🏼💰🧑🏻🍳😎!!!!! Lol totally okay! I often use store bought noodles. It’s really fulfilling to make your own noodles but yeah it does take time and effort ☺️ I got the standmixer when it was on sale so I was pretty lucky but if there is one appliance to splurge on I would hands down say save up for a vitamix. That machine is next level 👨🏻🍳🙌🏻

Once it’s completely dry, I put them in a airtight container in the pantry. I’d say enjoy them within 3-4 months

I would definitely kick this recipe up a notch with either sodium bicarbonate powder or lye water instead of baking soda.

Hiya Ofelia 🙌🏻 hmm I actually tried it with white flour and although the noodles looked fine, it really didn’t have that nice elasticity as bread flour ☹️ maybe you’ll have more luck? I used the same proportions. 🍜let me know how it goes!

Great German stainless steel... being a German myself I know. I live in New Zealand and very expensive here... what chefs knives do you use? I have Wuesthof and Zwilling... tasted the Chilli oil made with the rice bran oil today in my bowl of Ramen and it was great
No kidding, I didn’t even know kitchen aid had all those attachments!
Technically it's the gluten that gives your noodles elasticity. The bicarb gives it the texture.
ProTip: bake your baking soda for like an hour, or cook it on the stove, stirring constantly. This will take away its water and transfrom it into Sodium Carbonate which will make your noodle texture even MORE velvety.

Definitely! A lot of work tho 😅 you’ll need to roll the dough fairly thin and even depending on the type of noodles youd like to make. However, I have seen manual pasta rollers for around $50cad 😇 not too bad
