Chef trick that you might find helpful, is a lidded jar. Crack in the eggs, slip on the lid, and shake! Saved me so much time and gives a much better scramble!

I liked the description of the cheese mix recipe and you "talking to us"! That's kind of a cool way to bring us in a little to your day and let us learn as opposed to watching/guessing the recipes. My vote is for a bit more of that please :)

How many rolls of that blue wipe paper you go through per day chief ???. You must be a cleanest chef I have ever seen - have not ever seen you wipe your hands on your apron yet :).
When the egg shell gets in the eggs to be scrambled, take a piece of the egg shell & dip it in the eggs & the egg shell will draw out the pieces of egg shells in the eggs to be scrambled.
I think I've figured it out.. You work at an airport (obvi in the staff kitchen)! My guess just because everyone's wearing reflective vests but very well dressed and clean people, so definitely not construction/road work as well as always hearing planes very close when outdoor cooking or unloading trucks!

Thank you for the demo on making the "cheese spread" in the South US I grew up eating Pimento Cheese - while the internet recipes include cream cheese along with sharp cheddar cheese, mayo and pimentos (garlic and onion powder, salt and pepper too) my Mom and grandmom never included the cream cheese. There are two main 'brands' here and one even makes a spicey version although I feel quite sure it is cayenne that is added to the basic mix. Yours has looked so good in the deli episodes I have been curious as to what it was... although I am not sure I will ever get buttering the bread first. Thanks Mr. T
