Great video, beautiful production quality and showing the rich culinary history of a very ancient culture.

This reminds me of a restaurant near here called Aqui Es Texcoco. Their signature dish is called the Cabeza Completa - a complete roasted sheep head with eyeballs, tongue and brains intact. It's served with corn tortillas, onions, cilantro and salsa so you can make tacos out of all the different parts of the head. Yummy yummy! I do feel a bit like a Khan whenever I order it, and when I eat there with my 2 sons we're like a horde.

Looks delicious and I wish I could try. We do the same here in Iceland but with sheep heads and legs.
Which I assume is way more manageable. Cows heads are BIG.
