That isn't your camera, that is old meat. Clear when they start getting deeper down and more reddish tints appear (i.e. fresh, or at least fresher than the rest). A little brown discoloration on the top from the meat being out of the fridge would be normal, but that mince is brown through and through...

Haha, that's true! Using the same spatula for charcoal and meat might not be ideal. It definitely adds to the raw, unfiltered charm of street food cooking, but it's always fascinating to see how resourceful people can be in these setups. 😂🔥
This is called "once time food in liftime" because you don't get a second chance to try it! eat it once and you're in the hospital with heavy food vegification which doesn't really exist in those countries! so arrange your funeral before you go there to eat!!!!

It is oxidation, the longer the beef has been exposed to air and warm temperatures (not refrigerated), the more it will turn brown.
