    I tried this for Mother’s Day ! I didn’t have fish sauce, so I put light soy sauce . Taste just like the ones they sell outside! Thank you so much

    I am so bored of the taste of my rice porridge. You are a godsend with this dish.Tremendous thanks to you . I'm on self peritonial dialysis which is a system of filling my belly with fluid , so occasionally my stomach is sensitive. Thus the porridge to sooth me .

    Good broth. 👍🔥. I will normally add little bits fried dried shrimp and dried sole fish ( cut into very small pieces) as topping with fried garlic if not adding the dried cuttle fish. My mum ( teochew) used to grill the dried cuttlefish with charcoal instead of fried it.

    May I know how about the fried garlic you put aside? Do we add into the porridge together with the fried cuttlefish or?

    Blend the rice or blender the cooked rice to get a cream smooth feel of porridge. Nice also u can reduce cooking time ready half an hour insteadvof 2 hours.

      Hihi. Teochew porridge is different from Cantonese congee. In Singapore, Fish soup stalls will just heat up the soup and then add cooked rice to it and cook it for a short while before serving. Hope this explains but thanks so much for the suggestion 👍🏻👍🏻

      Hi Sabrina. Yes you can use chicken bones and you can fry the fish first. If you use sole fish, this soup will be extra extra nice but yes you can omit it if you want. Happy cooking!

    How to soften dried cuttlefish, brother? any tips?

      Good morning Jessica. You can cut them into small strips then soak them for a while. Not too long though. You might also wanna consider adding the soaking liquid in your dish when cooking so that you don’t lose the umami goodness of the cuttlefish. Yummy!

    Do you re use the muslin bag? How do you save the cloth or do you just toss it out?

      Hi Superknowledgesponge. We like your handle. So cute! You can just rinse the Muslin bag with dishwashing detergent and then dry it properly before storing it. It can be used multiple times until they have holes or look too old to be used.

      Hi Haslinda. No we didn’t. You just need to rinse it and then cook otherwise the flavour will be lost due to soaking.

      Hi Beryl. This is because we want to remove the salt from the shrimps then you can have better control of the saltiness level of the stock. Hope this explains. Happy cooking.

      Good morning! We have friends who always request for chicken feet whenever we use them in our cooking. Some viewers also said they would feed them to their dogs but we don’t really do that. As they are cooked in the soup for quite sometime, you would love eating them because they would have soaked up the goodness of the soup. Hope this helps.

      Hihi. The cuttlefish is for cooking - salted. Although it may look the same as those commonly eaten by Asians as snacks but it’s not - it has yet to be processed to be edible without cooking.
