  • Learn how to make tasty and healthy Chinese porridge or Chinese congee at home. In this video, I will show you how to make rice first (if you don't have any leftover rice in your fridge) to use later for making a fish porridge or fish congee using in a claypot. I will also show you how to make tasty condiments to go with the fish porridge or fish congee - fried garlic, Chinese dried shrimps and salted fish.

    My daughter's sick at home and at the same time, i was craving for fish congee in Chinese style. Here in my area (Balik Pulau, Penang)so hard to find halal fish/chicken congee in Chinese style (im Chinese muslim - married to a wonderful Malay hsband 😊). I want the congee in Chinese style because let's be honest, no matter how delicious the Malay dishes are, my taste bud always rooting back to its origin 😂 This recipe came out first when i was looking for fish congee recipe in Chinese style 😍 super easy recipe! I cooked with whatever i had at home to match up with your ingredients. For chicken stock, i used Knorr chicken essence cubes. For fish, i used red snapper, added in chives and a lil sesame oil! Voilaaa! The taste was so yummyyy! The leftover rice and the cooked rice tricks for making congee are both indeed gold for me! I really love rice congee/porridge but really hate the time-consuming process cause i always thought it needs forever to cook!(so naive 😂) Thank you so muchhhh for this delicious recipe, great tips and tricks!!! Love love love the leftover rice trick! For others this maybe nothing or even found me quite rediculous, but for me, this is truly life changing experience!!!       I enjoy exploring Balik Pulau whenever I get the chance. The amazing sunset view, the fishing village, beautiful sandy beach, good Hakka food, Penang laksa, CKT!
      I am glad that you have made it with what you've got in your kitchen, and tailored to your own taste. I can tell you are a great cook at home. And I don't mind a lengthy comment.
      Another tip if you haven't already been doing it already. I like to poach a whole chicken (in one of my video). Keep the stock in 2-3 small plastic tubs and freeze them for future use. And, if I have leftover rice, I will use some of the stock to make chicken congee 🙂

      @@belindajames1739 ...yes, of course..you can still add salted fish and dried shrimps..they give the porridge another layer of texture and flavour. Although, if I am to use chicken meat, I would use chicken mince or cut up a chicken thigh into small dices. Cheers, Victor

      Hi @Joanna Chang..thanks. I am glad you like this recipe. The only time I have cooked with fresh abalone is a simple sautéed with butter and garlic. Tenderize the meat first using a meat tenderizer. Then slice thinly. It doesn’t take long to cook. It becomes chewy and tough when overcooked. I haven’t tried making an abalone congee. But the preparation would be the same as explained. You can marinate the meat same as the fish in this recipe. Cook towards the end when congee is about ready to serve. Cheers, Victor

      If you watch from timecode 1.23 you will get a general idea of the ingredients and portion I used. The portion ratio is an individual taste. You can marinade the fish with 1-2 teaspoons light soy, 1/2-1 teaspoon sesame oil, a dash white pepper, 1 teaspoon corn starch, 1 egg white, 1 tablespoon fresh julienned ginger. The condiments are optional eg salted fish, fried garlic and garlic oil, etc. Have a taste before you serve and adjust by adding a bit of salt and white pepper to your own taste.

      Hi @Belinda James...thanks for visiting and watching my videos. I’m glad you asked. Yes, you certainly can substitute fish with chicken. My mum used to make chicken congee for us. But I would recommend to use chicken mince..take a pinch and roll in a tiny ball. You can marinate the chicken mince first with a bit of ground white pepper, a tiny bit of light soy (not too much) and a sprinkle of salt..all to your taste to give the mince a bit of flavour...add then drop into the congee when it’s hot to cook.       I will use the egg yolk for making something else…eg, in scrambled eggs, or can use it to brush over a pastry to give it a silky, glossy look, or baking that calls for egg yolks in the ingredients. You can skip the egg part of the preparation if you prefer not to use eggs. Cheers, Victor

      Thanks @Thanh Chin…I have a friend who uses instant pot too. They absolutely love it. Personally I don’t have one in my kitchen and I have no experience cooking in one as well. However, I did a quick google on “instant pot rice congee” and there are others who have used it to make congee. So the answer yes..you can make congee using an instant pot. Cheers, Victor

    Would it be desirable to simmer the rice longer until it turns into a paste-lke texture?

      Hi @msbrownbeast…yes, you can simmer a bit longer if you prefer your congee thick with rice completely broken down that you can’t see it’s shape, but be careful not to burn the bottom. You need to keep watching and stirring the bottom, or use a non-stickable pot. Cheers, Victor

      Hi @LUIE Mag DC..you can use any type of long grain rice to make congee, like the fragrant Thai jasmine rice. I cook using basmati long grain rice. I hope you have try making this recipe and it works for you.

      You can add the marinated fish into the rice porridge once the rice porridge is cooked to a consistency and texture you like to eat.
