One thing I noticed how you keep your hair pulled back, even the girls while canning, cooking,so good, I watch some like food network and others cooking with hair all don ,flying around, I was a cook for many years, always wore a hairnet, even now . Love your channel. You are a inspiration!

Yes! The majority of canning vlogs I watch drive me nuts with all the hair hanging down🤣 I found a hair of mine in a cookie many years ago and since then I tie my hair up😉

Agree. Hair should be restrained for foodstuffs & medical care. I worked medical. Nothing bothers me more than loose hair. #1. People working do not need to flaunt their hair. I worked with a gal that started wearing a long wig. Every time she went to a patient s room she put her wig on. Truly bizzaro. #2. With covid. That is an extra source for transfer of the contagion. People do things unconsciously and don't gel their hands afterwards. Sorry ms. Jessica. You gals are always neat & tidy. And a joy to see.

So glad you mentioned this. Long or short hair is beautiful but should certainly be tied up and covered in the kitchen. I always cringe when I see hair swooshing around in the kitchen. It is so distracting I can hardly follow the recipes because I’m thinking, ooh, hair! hair! who wants to eat that. Yuk!

This channel has rapidly become one of my very favorites! Although my mothering days are over, my grandmothering days have just begun, I love the true example of mothering that you show the world through your channel. I don’t do Instagram, but if I did I would encourage people to follow you there because a lot of what there is fake, phony and false, And only created to stir up covetousness of other peoples houses, husbands, and lives. It’s exciting to me that you are showing the world what truly should be desired.

John Johns reaction to the freeze dried peaches said a million words. Elizabeth is a sweetheart, looking out for her older brothers and making sure they don't miss out. Gabe just makes me laugh, both, both, he just wants it all haha. Such a teenage boy. Such beautiful souls your kids you have.

I have to just say that there are other homesteading channels that just don't seem to care as much about the cleanliness of their kids or their clothes. You seem to be such a great momma. You are one of the busiest moms I've ever seen. Your kids appear to be well fed, clean, healthy, happy, and not just worked to the very bone. I know that everyone raises their kids the way they see fit, but when I see kids with dirty hair, bad teeth, and clothes that look like scrub rags, it hurts my heart. You really are a fantastic momma.

My grandfather, worked as a dish washer in a cafe during the depression, as one of his jobs. On his first day at work, he saw a big bowl of potato peelings. They had been from the potatoes used for the day's mashed potatoes. He started to throw them out but the owner told him to put them aside. Later he saw the owner take the bowl out and give them to a local man that had a large family. It was one of the ways he fed all of his kids, collecting the peelings each day from the kind restaurant owner. That impressed my grandfather so much that he told the story to me in a very reverent way, and apparently it impressed me because 45 year later, I still remember it any time I see potato peels.

We save the peels to make chips with them. Just as good as with the potatoes.

When I was 48, a single parent to my daughter, I was found to have a benign, but growing brain tumor. It was messing up my depth perception and if I didn’t get it removed it could cause blindness or death. I don’t know why I was surprised that my Mom held my hand the entire time. She kept me company prior to surgery and brought me home and would drive the 1.5 hours both to and fro from her house to mine and back. I was so grateful.

The first year we had our pair of zebra finch birds (Zebo & Zora) we allowed them to breed and set up a nest. My daughter was 10 at the time and watching the process of building the nest, sitting on eggs, hatching, and watching both parents feed and take care of the babies was amazing and a very special time. We did keep all of the babies which were all boys which we named Zippy, Zeus, Zucchini, and Zorro.

I had just removed 7 quarts of potatoes from the pressure canner when I saw your video was uploaded.
I'll have to try potato salad with a jar.
Next up I'll be dehydrating thinly sliced potatoes to use in Christmas gifts. Making diy scalloped potato mixes.

I love my freezer dryer! I understand your family loving it a well. Mom recommendation... get the silicone mats! I have 2 sets and rotate so I can hang dry the freshly washed ones. Some good items really stick to the metal trays and you lose that food. The mats decrease that drastically! They also make great funnels.
In our experience Russet Potatoes come out grainy in the freezer dryer! Red and yellow potatoes do great!

Oven fried potato peelings are an Easter eve tradition at my house - it started as a "what if" moment when the kids were really young, figured "nothing ventured, nothing gained" and tried it -- the kids LOVED it, so now whenever I make a large batch of tater salad, there'll be skin chips too. Since the potato skins were boiled for the salad, we just pop them into a 450F oven until crisp.

Hi Jessica. I just wanted to warn you that with the littles eating so much of the freeze dried peaches that if they didn't drink plenty of water to compensate they would all end up with bellyaches. As the dried peaches will want to re-hydrate and they will use up all their stomach juices to achieve that. Ask me how I know lololol. I did it with freeze dried mango and I'm an adult and should have known better but come on it was mango lol. Hope all was well. Michelle

If you haven't tried it yet, I love to fry my canned potatoes, /they are the bes that way in my opinion. Just drain and add butter to skillet and a bit of olive oil and when melted and hot, add potatoes. What a wonderful way to teach your children about life by watching the birthing process. You have a beautiful helper and so smart also, I love that she is able to incorporate her math into her practical learning. I loved doing projects with my daughter, still do in fact. She is 40 and my youngest child and best friend. Is that a whole house full of BOYS and just the one daughter? I just found your channel a few days ago.

Your children are so precious, and such good helpers! And what a blessing it is to hear you give glory to God (as always) for your own Mother. I've heard 3 different messages this week, from 3 different Pastors, who spoke on Acts 12:24-25, so my mind has been especially open to hearing how others are giving God the glory for what He's done in their lives. Your video here (although it was filmed a year ago, now) was right on time. Thank you, as always.

Now you have me curious why you don't peel your potatoes but do your boughten ones? I love canning in Jan and Feb and it helps keep the house warm and puts moisture back in the air the fireplace takes out. Thanks for sharing a part of your busy life!

I just don't know what the peels of the bought ones were sprayed with and how that could affect my canning.

😂You can't make great food and expect kids to pick one. I always tell my mother both when she's making something and tells me to pick one to make and save😊

Do you adjust your head space. I noticed the jars were full with no space.

Thanks for this video. I have wanting to can potatoes and this is very helpful. Your assistant is great! By the way, where do you get your wide headbands? The one you are wearing is so pretty.

Interested to see potatoes done. My niece did and they came out as unedible mush. Is it best to only can russet as I would think reds and Goldens would be mush.

I wonder why you can potatoes that you have been grown with the skins on? As far as I know (I am a somewhat new canner that we are supposed to always take the skins off veggies because of bacteria even when we grow them. Plus heat does not penetrate as well through a veggie with the skins on.

The heat penetrating through isn't an issue with sliced potatoes. I thoroughly scrub the potatoes and feel confident about canning the homegrown ones because ai know how they were grown and that they weren't sprayed with anything. Just a personal preference. Safe canning guidelines say to never use peels.

Do you have any concerns about lead in the blue canning jars? I did just a bit of research and it looks like the new ones aren't the concern that the old ones were. I got a mixed message from one sight saying the researcher had found a small amount of lead in the new blue canning jars, then also saying Ball had the lowest lead levels.

Fun peach experiment with the water. That's the kind of thing I like to do, especially when I was a preschool teacher :) The potato peels must be amazing ! Yum! How do you think they would do in the freeze drier? Do you eat many fresh salads? The puppies are cute. tfs 🥰🎄🌞🌛🍭🍬☕🏜️🎅💝✝️
