    Hi, I'm Joconde.
    This cake is a chestnut whipped cream cake or MontBlanc cake.
    Actually, it's not a Montblanc cake shape, but I made it with the Montblanc cake recipe.
    I made chestnut paste mousse and layered it inside the cake.
    Decorating cake with chestnut paste cream, which is usually found on Mont Blanc cake,
    I wanted to give it the shape of a nest with chestnuts in it.
    But my son teases me about whether it's buckwheat noodles. Whoops...
    Anyway, the video contains tips to improve the flavor of chestnut cream.
    Please check this in the video.
    It's a whipped cream cake, but the cake sheet is not Genoise but ‘Sacher torte’ style sponge cake.
    After creaming the chocolate, butter and egg yolk, mix the egg white meringue to complete the cake batter.
    This sponge cake having a velvet texture goes well with the chestnut cream.
    The last decoration of the cake, how to make leaves, was excluded from the video.
    There's nothing special about it, and I was concerned that the video would be too long.
    Using shop bought sugar fondant, make dough of three colors and knead it togather.
    After rolling out them,cut it out using a leaf plunger cutter.

    ♥︎ Chestnut Cream Mousse
    1.5g of gelatin
    64g chestnut paste
    12g sugar
    10g rum
    110g whipped cream
    ♥︎ ‘Sacher’ sponge
    40g butter
    26g icing sugar
    42g dark chocolate (57.9% callebaut)
    32g egg yolks
    56g egg whites
    48g sugar
    40g cake flour
    ♥︎ Icing Cream
    420g heavy cream
    34g sugar
    ♥︎ chestnut cream
    180g chestnut paste
    10g rum
    50g unsalted butter
    15g heavy cream
    ♥︎ Rum Syrup
    60g water
    20g sugar
    6g rum
    The rum used in the above recipe is rum without alcohol.

    I was thinking ‘What person in their right mind makes their own chestnut paste?’ It’s truly a case where the canned stuff from France is not only so much easier, it’s better! I laughed so hard when you said that ’you could make your own. I’m not.’ Homemade chestnut paste is not worth the effort! I don’t know what magic they use to peel them, maybe an industrial steamer and brush rollers? Whatever it is, I’m happy to pay someone else to do it!

    Хотелось бы узнать какой миксер вы используете на видео. В описании малинового торта была написана модель миксера, но я не нашла его в интернете :( мой миксер не взбивает сливки как положено.

      чтобы сделать шантильи успешным, не бойтесь поместить стержни миксера и салатницу, которые вы будете использовать, в холодильник на 30 минут, прежде чем начинать рецепт, и добавьте жидкие сливки в морозильную камеру. на несколько минут!

      아 아버님이 좋아하실거에요. ^^
      오븐은 스메그 오븐 사용하고요 생크림은 주로 서울우유 생크림 92%과 매일 휘핑크림 8% 섞어 사용합니다.
      무스는 하루 전날 만들면 아주 좋습니다. 단단하게 굳어서 만들기 편리 합니다. 그래도 밤페이스트 양이 많아서 상온에서 살짝 물러 지기 쉽기 때문이에요.
      럼은 알코올을 빼야 합니다. 많은 양이 들어 가는데 알코올이 있으면 술맛이 납니다. ^^

      안녕하세요 ^^ 시청해주셔서 감사합니다.
      얼그레이 생크림 말씀인거죠? 조색은 어떤 색으로 하고 싶으신지요?
      물론 조색자체는 가능합니다. 붉은계열이나 노랑 또는 브라운 계열은 무리 없이 어울릴것 같습니다.
      하지만 푸른계열은 색이 예쁘지 않을 꺼에요.
      꼭 케이크를 원하는 색으로 만들고 싶으시다면
      샌딩크림과 애벌아이싱 부분만 (아주 얇게 도포하는 아이싱) 얼그레이로 하고 케이크를 냉동실에서 30분 정도 두었다가
      마무리만 원하는 색의 생크림으로 아이싱하는 방법도 있겠습니다. 저는 주로 이렇게 합니다.
      이렇게 하면 케이크의 원 맛은 유지 하면서 색은 바꿀수 있지요 ^^

    mont blanc cake is perfect for my mother birthaday cake since she born on thanksgiving day. however, we don't have big chestnut in america which nuts I should use instead of chestnut

    How many grams of castor sugar should I use instead of using icing sugar I find icing sugar is way too sweet &would prefer to use castor sugar instead?

      Hi~! Chels bells. I wouldn't say that icing sugar is always too sweet. But you can use same amount of caster sugar instead if you want.

    I love your channel, but even I would not do that alcohol part I would burn my house down trying something like that, I do how ever have a special pan that is a lot of years old given to me by my grandmother to roast chestnuts with on an open fire, the smell alone is divine, where I live at Christmas Markets we have people selling hot chestnuts YUM. I have a suggestion for you because I can't watch and do at the same time that's when I make accidents. I know a few of these cooking channels who are successful have now brought out their own recipe books, If you know someone or you can do it yourself it would be a good investment because hand on my heart I would be in the line for the book. Cupcake Jemma did it first and hers is a small but very good recipe book. Self publicised as well. I think your recipes and tips are phenomenal and I want to try them but I am a disaster at trying to watch and cook at the same time. Usually ends up in the bin

      제가 럼레진을 한번도 써본적이 없습니다. 만일 향기가 있고 알코올이 없다면 사용해 볼 만 한것 같습니다. ^^

    조꽁드님~ 케이크를 실온에두면 안에 무스가 녹을까요?ㅜㅜ 무스케이크는 온도에 너무 민감하니 항상 도전을 못해서.. 해보고싶은데 걱정이예요ㅠ

      제가 조꽁드님 래시피로 만들어 봤는데요, 조꽁드님 밤무스 크림에 판젤라틴을 넣기때문에 실온에 두어도 녹지 않더라구요! 하지만 장시간 너무 따뜻한 실온에 둘경우는 녹을 수 있어요.

      저는 보니밤 조림할때 마지막에 럼을 넣는데요, 넣고 안넣고 차이가 엄청 크더라고요. 고급스런 향이 나서 개인적으론 맛에 큰 차이가 나서 시중에 판매하는제품과 비교해보면 비교가 확 되요!
      기술적인 요인보단 향에따른 맛에차이로 넣는다고 보심 될거같아요~ 특히 밤이랑 참 잘어울려요.
