      Makloubeh is more common in egypt syria and palestine mandi rice in saudi arabia uae and yemen biryani in india pakistan bangladesh and sri lanka and pilaf in afghanistan and central asia

    it's a Palestinian dish , Maklouba means up side down , u make it with Indian toutch we don't use the hot pepper and we don't marinade the checkins , any way your cook is awesome man :)

      true good to be creative, but the original is still better than this recipe - he didn't get it exactly right lol...he said he makes better than the original (arabs)...I say no, not so - no peppers, no indian spices, arabic spices for the original taste and on the chicken, more eggplant and also some additional veg, usually carrots - eggplant + carrot, with beef or lamb usually; chicken makblouba more often made with cauliflower and carrots (carrots cut into sticks). His is probably ok, but I still prefer Palestinian original recipe, the spices are delicately balanced and its much better with short grain rice. His did not keep the proper shape or come out looking right with that long grain basmati rice, this dish needs a stickier short grain rice. Indians don't use it often so he probably isn't familiar with it and doesn't know how to cook it just right, which can be a bit trickier.

    hahahah you are awsome man! I am Palestinian and I make maklubah a lot! I like your way I think it is the easy way. the way we make it is we cook the chicken first by seasoning it like u did and we put oil and frie it a little then we add water and we let the chicken cook in the water for an hour then we do exactly like u. put chicken then veggies then rice and cook it for 15 to 20 mins till the rice is fully cooked. I am going to try your way though it is much easier

      Safa Yaghnam . Hello there. you should make a video of how you make it. I would definitely like to see it. I went to Palestine many years ago and loved the Maklouba my ex mother in law made. I always been thinking of making it but never have. I would if there was a video of the Palestinian version. JS

      Safa Yaghnam "Makluba" is originally a Palestinian dish that has spread from Palestine to the rest of the Arab world. Chef, as my mother cooks it she uses certain spices to be specific cinnamon, cardamom, and a dark spice called in English (all-spice) or in Arabic بهار حلو. These are the three major spices my mom uses. Maklouba is usually served with Palestinian "farmers' " salad and yogurt. Thanks chef.

    How did you prepare the rice so that it could grow this long, some people say use sella or 1121 variety, some people say you should store the rice for up to a year. How do you wash your rice, do you let it soak for hours or just wash it a few times. Can you make a video just about preparing the rice..

    Copy paste this word مقلوبة wich is maqloubeh in arabic, and u can check all the ways to make this great dish.
    I bet ur dish is awesome but it's not maqloubeh.

    Dear Naga.
    I was not expexting vah chef to come-up like this. I respect him, but at the same time expect him to share authetic receipes. Most important he should respect other cuisine and refrain from calling ulta pulta. Biryani is not originally an indian dish anyway. It was introduced by out siders. Much of indian food today has roots in turkey, persia and arab world.

    Hi chef,
    I tried ulta biriyani today, i added carrot and green beans along with potatoes, eggplant. The reason I added carrot is because my son 6years old like those vegetables, so I just added and it Came out very well, during this lock down period I'm home and enjoying cooking and helping my wife and kids. I impressed my wife and children. Thanks for your recipe. Also I have tried your other recipes as well. Your my guru for cooking. I have impressed my family people by my dishes I learned from you.     chef from beginning itself I had much intrest in cooking... but after seeing your vedios I got much more and more intrest and I tried many recipes of your style and the way you present the recipes and the way you taste at last make me to cook that recipe immediately thank you somuch chef
