it's a Palestinian dish , Maklouba means up side down , u make it with Indian toutch we don't use the hot pepper and we don't marinade the checkins , any way your cook is awesome man :)
true good to be creative, but the original is still better than this recipe - he didn't get it exactly right lol...he said he makes better than the original (arabs)...I say no, not so - no peppers, no indian spices, arabic spices for the original taste and on the chicken, more eggplant and also some additional veg, usually carrots - eggplant + carrot, with beef or lamb usually; chicken makblouba more often made with cauliflower and carrots (carrots cut into sticks). His is probably ok, but I still prefer Palestinian original recipe, the spices are delicately balanced and its much better with short grain rice. His did not keep the proper shape or come out looking right with that long grain basmati rice, this dish needs a stickier short grain rice. Indians don't use it often so he probably isn't familiar with it and doesn't know how to cook it just right, which can be a bit trickier.
hahahah you are awsome man! I am Palestinian and I make maklubah a lot! I like your way I think it is the easy way. the way we make it is we cook the chicken first by seasoning it like u did and we put oil and frie it a little then we add water and we let the chicken cook in the water for an hour then we do exactly like u. put chicken then veggies then rice and cook it for 15 to 20 mins till the rice is fully cooked. I am going to try your way though it is much easier

Chef, as my mother cooks it she uses certain spices to be specific cinnamon, cardamom, and a dark spice called in English (all-spice) or in Arabic بهار حلو. Most important he should respect other cuisine and refrain from calling ulta pulta. Biryani is not originally an indian dish anyway. It was introduced by out siders. Much of indian food today has roots in turkey, persia and arab world.

The reason I added carrot is because my son 6years old like those vegetables, so I just added and it Came out very well, during this lock down period I'm home and enjoying cooking and helping my wife and kids.
