This is the type of ice cream people are used to eating in Arabic countries at least several decades ago. I grew up enjoying it as a child. I’ve eaten there. I bought the 12$ pint, which is just this bowl and they do two heaping scoops of whatever flavor you want. I got the salted oreo (which isn’t salty at all) and the guava (which is vegan and is a slightly salty). I didn’t like the guava but my husband like died for it. But they let you try the flavours so you can decide what you like. They’re super nice. The portions for the cups are really small. Like the small cup is really really reaaaaaaaalllly small and the biggest one looks like a medium. I like the texture of it and I like that you can actually chew it and not get a brain freeze. If you wanna get a chance to sample all the flavours I suggest going when they open because later in the day they sell out. And there isn’t a lot of sitting space but that didn’t bother me. Overall it’s pretty lit

"Booza" is the Arabic word for ice-cream. The word is written like this "بوظة". The stretchy texture of the ice-cream is made through the powder called "Sahlab". It contains starch and other ingredients which I don't know, since we also make hot drinks out of it in winter.
Thia type of ice-cream is the best. I've been eating it since I was a child, and it's really nice to see it being shared with people from different cultures so they can experience it.

So happy that the Levantine way of making ice cream is brought to light. When I was growing up and going to the middle east every now and then, I'd get so excited watching the ice cream parlor making the booza. I’ve eaten there. I bought the 12$ pint, which is just this bowl and they do two heaping scoops of whatever flavor you want. I got the salted oreo (which isn’t salty at all) and the guava (which is vegan and is a slightly salty). I didn’t like the guava but my husband like died for it. But they let you try the flavours so you can decide what you like. They’re super nice. The portions for the cups are really small. Like the small cup is really really reaaaaaaaalllly small and the biggest one looks like a medium. I like the texture of it and I like that you can actually chew it and not get a brain freeze. If you wanna get a chance to sample all the flavours I suggest going when they open because later in the day they sell out. And there isn’t a lot of sitting space but that didn’t bother me. Overall it’s pretty lit
It takes so much effort to just make those ice-creams, I'd love to taste those someday
