I did a €62,- haul today and felt like I got a ton of food too! I find myself sticking to very simple foods these days and buying the bigger bags of potatoes, rice etc. because they have the better price per kilo. Also tend to skip any canned beans and just cook tons of beans from dried on the weekends and freeze them so save money there.

I really miss nachos so I slice the Ezekiel tortillas and bake them till crisp. SO yum. I also love the t.joes vegan tzatziki to drizzle on top. I'm really bummed they discontinued their organic vegan nacho cheese. The buffalo cheese is too runny for me but tastes good.
Me too! I thought that vegan nacho cheese was really good. Probably the best I've ever purchased or even maybe made myself. I heard some people say they thought it tasted artificial but I didn't think so. And it was a bit of a dietary splurge for me because it wasn't the healthiest thing in the world, but it could sure hit the spot sometimes. 🙂
I saw a recipe making a really quick and easy Whole Foods vegan nacho cheese blending boiled cauliflower and a can of rotel or like tomatoes with chiles and that’s it! I would add nutritional yeast and lemon
It’s such a bummer that trader joes discontinued their no salt marinara! The only other brand that has a no salt one is sprouts, it’s kind of expensive not crazy but I think it’s worth it cause marinara is always so high in sodium I’d rather add my own. And sprouts also has pea crumbles without any seasonings added! It’s by the brand Plant boss! I agree the texture is the best!

Fortified nutritional yeast usually contains synthetic folic acid. Evidence suggests synthetic folic acid, which is chemically different than natural folate, promotes cancer growth and disrupts normal folate metabolism. (quote from Dr. Fuhrman's website) Sari Foods on Amazon is delicious but expensive. There are other non-fortified brands out there, too.
If you can afford to buy organic you always should. When they spray the pesticides it gets into the soil with the watering and the rain and then grows into the plant. It can't be washed off. So even with bananas I would always buy organic.
Also wondering if you are vegan or sometimes have eggs? Sorry if you already did a vid.on this subject. I'm pre-diabetic Vegetarian. I would say 80/20. The 20% applies when I go out and know beans might be cooked with lard or something might be made with egg or butter. When I'm home 100% vegan. Attempting the Mastering Diabetes low fat theory. Starch solution... Oh and for years I was keto and I feel that caused my prediabetes besides family history. BUT once I went vegan my last 10 pounds melted off! Without much effort and my cholesterol finally went down.
Yes I sometimes eat eggs I’m not 100% vegan anymore but I still have many days where I eat only plant based! Congrats on your weight loss and lowering cholesterol!

Forgot to add the plant boss pea crumbles are also organic which is important for peas.
