You quite correct riza! Yasoo, When on the Islands of Greece Kos, Curfu, Rhodes, Creete etc I used to watch the fishermen bashing the large squid against the wall to tenderise them I guess? They were heading straight to the local restaurants! Greek food is the best! Yurkey also lovely but bland food without the taste of Greece!

It looks really nice, but this looks like a regular crispy Kalamaris. If you really want to up the flavour you absolutely need to marinate the squid inside lemon juice and salt. The flour you use need to be mixed with oregano, thyme, salt and pepper, fry in olive oil and top with extra virgin Greek olive oil and lemon juice. Add the aioli and it's perfect.
Akis Yasoo, I hope you can help? there is a Greek dish that I cannot remember the name of that I always loved when on the islands of Corfu particularly, Kos, Crete Rhodes etc, I'm sure the dish name starts with S (not Stifado) it is tender fillet steak cutlets in a lovely rich gravy sauce with allot of garlic and maybe oregano seasoning, it's annoying me that I cannot remember the name of it?! Maybe someone else that reads this could help?

This guy's constant yelling, so he may be heard above the wind, wave noise, and especially above that phony R'n'Roll smashing on, makes me feel he might drown any minute. And he's so obviously out of breath, his enthusiasm is so thickly laid on, he exhausts me... Pity, his cooking isn't bad at all, if only some peaceful background would give him - and us - a f**g break! Sorry, Akis, no hard feelings... Still a good job there!

Crispy calamari will always be one of my favorites. I usually just enjoy it with a spicy vinegar, but I will definitely try that saffron mayo!
