I just tried this recipe. I didn't have wine or the porcini mushrooms so i just used grape juice instead of the wine & just plain water for the porcini water. that being said, it came out delicious & I highly recommend for anyone to try it out. I also topped it with a little nutritional yeast for a cheesy boost. amazing!!

Pasta is my absolute favorite food and I am trying to cut down on my meat in take but I love spaghetti bolognese but am not of fan of plain tomato sauce so it's nice to see a meat free alternative for a sauce that look tasty and hardy.Can't wait to make this!

I was actually inspired by chef Roberto to give up dairy for a month in January, just to see what it would be like. I have never felt better or more energetic in my life! I was really surprised by that. I know January is over now but I haven't had any dairy since. I'm not craving it anymore at all.
I just made this tonight the sauce was so awesome the only thing I did not put was red wine cuz I didn't have any. But I substituted a little bit of honey to balance the taste. Who would've thought that is this pasta is meatless!!!! New to the vegetarian diet me.

Perhaps it would be better instead to just buy her cook book so you don't have to listen to her, but you really gotta hand it to the chic. i made this and it was great! well, i made the sauce, not the pasta. It was really hardy. i just wish i would have cut the tomatoes smaller so it was less chunky and more saucy. overall pretty good. Oh, and i added extra seasoning because mine lacked a little. Try it! but make half the recommended batch, in case you dont like it
Actually, semolina made of durum wheat is also good by itself, without eggs. Spaghetti are made without eggs because of this. It contains gluten and protein already. Usually eggs are added to make a dough with normal wheat flour because it doesn't bind so well. However, I like your idea of using silken tofu. I'll try it. Thanks!
+TheMissTesla Make sure you check in the dry goods section, possibly in the asian/cultural foods isle. Silken tofu may not be refrigerated it usually comes in the tetra packs like kid juice boxes.
Actually Chloe is an unbelievable chef! Her recipes are the only ones I need to make amazing vegan food!! She is great! You should by her cookbook "Chloe's Kitchen" you'll see what I mean!
