Why didn’t you bend those ends over and leave some extra on for a future repair? Also that way you wouldn’t have had to epoxy it so when your handles break someday in the future they can be replaced again. I have seen old knives like this pulled from 200 year old buildings and be used immediately.
Good job all round. Perhaps a little bit more sharpening would help (to avoid accidents.) Like the handles although the woodworm eaten handle would have looked cool if it wasn't so far gone.
