Canh chua is my comfort food, even though I went vegetarian I still eat it religiously, love the 'mint' or bạc hà (how we call it in the south; dọc mùng in the north) in canh chua, i don't know if you have it in America though, the only thing I can find on it in English is the scientific name " Colocasia gigantea" Hi! Update: I found the common name for it is Elephant Ear! It's looped into the colocasia genus but very commonly called Elephan Ear, they're big beefy plants that can be planted both indoors and outdoors. They're absolutely delicious in canh chua and also my favorite part of it. Can't have canh chua without it in Vietnam :)
