    You'll Need
    4 lbs boneless chicken thighs
    1 heaping tablespoon Caribbean Green Seasoning
    3/4 tablespoon salt (adjust)
    1/2 teaspoon black pepper
    1 teaspoon Worcestershire Sauce
    1 teaspoon grated ginger
    1 scotch bonnet pepper
    1 med tomato
    1 medium onion
    5 medium potatoes
    1 tablespoon olive oil
    1 1/2 tablespoon golden brown sugar
    3-4 cups water

      This guy taught me to make trinidadian corn soup. Now every time my family wants corn soup I'm one has to make it loll. He seasons his stuff perfectly you gotta try more of his recipes.

    I am from a Trini family (Dad's side) and he taught me this dish when I was probably under five years old. As I became into my adult life I did change it up a bit in that I add sliced water chestnut and sometimes sliced carrot. Adds some sweetness and the water chestnut adds some crunchy bits. Always marinate same as Chris. Bone in chicken, tomato, scallion, thyme, borage, garlic, tomato, worchestershire, and of course scotch bonnet.

    I made this DELICIOUS meal/recipe on today! 😋😋 My husband is a (home made) food critic.🤣 He kept complimenting how good this dish is 👍🏽👍🏽. FYI: only difference i did was add cut portions of corn on the cob (niblets) and rice on the side for other family members. One of my best dishes yet! Thank you!🎊🎊🥳

    Excellent recipe my brother. One suggestion, try not to use a metal spoon in your nice expensive enameled pot, in the long run you are scraping the enamel off, wooden spoon is best.

    I am glad you mentioned roti. There was a Caribbean place here that was ran by a 🇹🇹 man who used to make these rotis wrapped like a crepe for burrito. You could get with curry 🐐, 🐔 or shrimp. I used to get the vegetarian one with curry cabbage, potato and chickpea. Could you do some videos with more roti?

    I'm Tobagonian and I absolutely agree with you about the ketchup and soy sauce, not traditional in any way.

      Hi Sharon! Using ketchup and soy sauce is not traditional, true, but it sure tastes great! Other non-traditional ingredients that could be considered- butter (to thicken that yummy chicken sauce, and it will tame that burn from the Scotch Bonnet too, IMO!; another is sweet potato (in addition to the Yukon Gold potato that Chris suggests), this will also help to thicken the sauce as it breaks down, IMO; and one last idea- garlic! Yes, more garlic! I know, it is not traditional, but it sure does amp up the flavors and garlic will reduce the need to add more salt before serving, IMO! I also enjoy adding chunks of fresh red and green bell peppers to this stew, for color and for texture. Again, not traditional but they add great additional visual appeal to this stew. Add them 15-20 minutes before serving so their color stands out in the stew as you serve it. Other ideas to try- how about peanut butter? How about bacon? (c'mon, everything tastes better with bacon!). Happy cooking, Sharon!
