Dear Sam and boys, I used to be a zero in the kitchen and now I'm the hero. I used to always have take-out and never wanted to cook until my old roommate had us over and cooked smash burgers. I asked him where he learned to make these, he shared a link to your video, and I have been hooked ever since. So now I try to cook whenever I we have game night with my friends and they are always excited to see what I will be making. I have barrowed dozens or recipes from the Ribeye Chili, Tequila lime Shrimp, to the chicken teriyaki. I will definitely be barrowing this one for the next game night. Keep up the awesome job and thank you for showing me how fun and easy cooking can be!

Note: Every pan gets as hot as your stove can make it. Cast iron just retains heat better because it has more mass and thus a higher thermal capacity. Non-stick, ceramic, and even steel pans get to the same temp.

About a year ago I saw Kenji wrap a chopped cheese in foil. Said it allowed the filling to steam the bun. I tried it, and, man, what a difference! Compacts the filling, steams the bun, and would give a good cross-section for pictures! Every time I make these type of messy sandwiches, I do the same now with either foil, wax paper, or butcher paper. Please try that on your next messy hoagie!
I have, at last, found something that I am genuinely better at than Sam. Talking in a London accent. Fair enough, born and bred there, but a victory nevertheless! Great work, especially that bit about adding a bit of water to make steam. So simple, but brilliant. .... guv.
With the marinade, a better option for it would be to put the steak in a larger, sealable freezer bag and just put the marinade parts into the bag as well. Tends to make things simpler with pretty much every type of marinade with meat. Lets you mix it easily a few times when it's in the fridge without the need for washing your hands off each time or needing to wash another tool.
Just a request for a future video. Your setup (Evo, grill, etc) is always so emmaculate. Would you consider doing a video on cleanup and maintence of your space and equipment?

Sam, thanks for the inspiration. I used some Costco roasted veggies, already pre-cooked, but seared for flavor with added sriracha. I finely sliced some sirloin, seared it with hot oil, added cheese and roasted vegetables. I added it to toasted homemade bread with horseradish sauce. Not Philly Cheese Steak but F"n great steak sandwich. I even wiped my mouth on a clean, full roll of paper towels.
You can either continue begging and probably never get one, or just buy one somewhere. They're like $20 for a decent one. I recommend getting one with the little plastic piece that matches the holes, makes cleaning 10x easier.
To cut the meat thin, freeze it like you are showing, then use a good mandolin to slice it nice n thin. Works great and a lot cheaper then a slicer, and way easier to clean. Just be safe mandolins are super sharp. Enjoy, Sam you rock.

If, like me, you don't like cilantro, use fresh parsley and a few sprigs of fresh mint, it's awesome.
I Par-Freeze my meat then i use a quality Mandolin slicer and it's EPIC!
