I made this tonight w/flour tortillas. I am glad I bought the extra green sauce as I only had small cans. I added a little sour cream & guacamole for my healthy fats since not much of this is healthy but so worth it. The house smells so good but the taste is even better. The best part is I get the leftovers for lunch tomorrow. YUM 😋 I love my Ninja Grill especially for steaks & chicken but my new Ninja Speedi has been the funnest, least expensive & my new favorite meal maker. Thanks for sharing this delicious recipe.
I like shredded beef better. Yum! I like Ol El Paso red enchilada sauce and lots of Colby Jack cheese. I also sometimes use flour tortillas. Soooo good! Best recipe yet. ❤

you are very lucky because your Speedo’s have a guard covering the heating element. I had my favorite Air Fryer for 8 years, no matter how hard I tried to keep it clean after each use, but it stopped working and I think precisely because I did not have the opportunity to wash the heating element and a lot of fat accumulated in it. Why don't all heating elements have a protective screen that can be easily removed and washed? 😢
Looks good BUT I think I’d add the taco seasoning after cooking the chicken that made a huge cleanup job in the top burner section that steam and crisp without the seasoning would avoid
Amazing!! I have a chicken enchilada recipe that my kids call chicken, cheese, chips casserole and I’m going to adapt it from your example to do it in the Speedi. The only real difference is that we use tortilla chips as a bottom and top layer. Gives it a little crunch. Thanks so much! By the way, I love your channel and use your tips and recipes often. Keep up the great job!
@@CookinWithJames it’s pretty delicious, lol. I pour about a cup of chicken broth over the top of the chips and finish it with paprika and parsley flakes before I bake it. The chicken broth helps the seasonings to adhere and gives the chips a really nice crunch on top, as well as making the chips on the bottom more like a corn meal type crust of sorts. If you try it, you’ll have to let me know how you like it. Any questions let me know 🥰

Hi James, I made this recipe and it was delicious! We will be eating the leftovers tonight! Hubby said recipe was a keeper! Only problem I had was the bottom layer of tortillas was burnt on the bottom! Do you know what I did wrong? Thank you, Kathy
James, could you do a tutorial explaining the reheat option? Ninja hasn’t done a good job with this option and I want to reheat a burrito…not just pizza. Thanks
Ya. The burrito isn’t gonna do good reheating because of the tortilla. It will get hard. Microwave is best for that. The speedi is a mini convection oven
This casserole was delicious, but the bottom tortillas cooked a little too much for some reason. Maybe I'll shave a few minutes off the cook time when I make it next.

You can place the crisping tray on the top setting to prevent a lot of the splattering from getting all over.
This is very similar to the ninja foodi smart lid, except it has been cooked in the latest ninja speedi.
