Should I let my engine heat up before I ride?

This is such bad info. You want to get out of that cold start condition as quickly as reasonably possible, and letting the bike just sit there and idle is the absolute slowest way to warm it up. Meanwhile you're running rich that entire time (bc the colder it is the harder it is to get gas to vaporize for combustion, hence the need for more of it) and that extra fuel is washing down your cylinder walls and increasing wear. The correct answer is to start it up, give it a few seconds just to build oil pressure and whatnot, then ride it for the first few minutes like a responsible adult at relatively low load until it gets up to operating temp, then if you want to romp on it be my guest.

This. Are they even tracking oil temp or just coolant during this demo?

But when the motor is cold and you take off you take a chance of the head gaskets blowing out before they can warm up and expand. It only takes a few minutes for the bike to warm up

my Harley owners manual states to warm up for 15 -30 seconds and that it's important. never know how EPA effects idle or oil drain intervals and I have no problem with the EPA.
    I wait about 4 minutes.

Engines wear less once they reach operating temperature and the quickest way to get there is to work the engine by driving it.

After completing work on a Harley, how many mechanics let the bike warm up before they take it out for a shake down ride?
