A couple of ideas... I bought a Nesco electric pressure canner. I watched Rose Red Homestead do a comparison and that was the winner for the safest (also the least expensive). All that to say, for small batch canning, it's amazing. When you have just a few pints or quarts, it's really hands off canning and is perfect for the small batches of beans or tomatoes or anything else. Dehydrated juices are great and easy to powder for recipes or juice. You can also dehydrate citus and use in teas, powder, or maridades. Just drop in whole and they reconstitute well. I'm going to freeze dry some and give that a try, too. Love all the goodies you have coming along. Always fun to catch up on the homestead.
Harvesting a few handfuls of green beans a day just put them in a Ziploc bag in the refrigerator and they will keep just fine 5 to 7 days. Just add to it daily until you have enough to can.
I used to make large portion of beans for a meal then I would package up the left over and freeze it. I would slowly add to the total. Make sure you date so you can cycle thru them.
Nice your honey got you a juicer. Sure seems to make that job goes faster. You could zest your skins to dry for recipes. I like to use lime zest in my marinades. Or you can slice and dehydrate whole lemons and limes.
You might just want to squeeze your lemons and limes and just freeze the juice. Either in jars, do not fill all the way up leave room for expansion or put in ice trays let them freeze and then put into freezer bags. Good for recipes that ask for lemon juice.
