    People have been eating bread for thousands of years and living past 90 years old doing so. Now all of a sudden bread is bad.

      Bread is only "bad" for people who have celiac disease or non-celiac gluten sensitivity (NCGS). For most people it's fine.
      But also note that celiac disease has been with us since at least Roman times. It's only since the end of WW II that physicians began to suspect that children who failed to thrive had an issue with gluten. So people have been dying from celiac disease for more than 2000 years. Today we know how to treat them. They MUST avoid wheat, rye and barley.

      Yes I agree with you 💯 👍, but this days it's better to do it yourself at home and you know what you are adding into it, plus you can make more and put in the freezer then when you toast the bread 🍞 the gluten is gone. FREEZING THE SOURDOUGH OR NORMAL BREAD 🍞 IS THE KEY TO AVOID THE GLUTEN THAT THEY DON'T TELL PEOPLE TO MAKE MONEY

      Yeah my Italian grandma lived until 95 but it was painful for her to be alive. She had so many problems… from bread and wine and the Italian diet

      My lovely grandma died at 93 last year because of the corona. She was eating bread, rice and drinking coke. If you’re genetically lucky you will be ok otherwise good luck.

    Please explain to me why people in the Mediterranean, Italy for example, live a long life despite eating pasta daily, fresh sourdough, olive oil, meats, salads, fresh veg and red wine. People in my village are working on farms in their late 90s! I believe it’s down to the naturally grown and good quality food and environment. But they don’t live off just organs, honey and a certain type of fruit. Curious what your thoughts are on this.

    There's weston price article if i remember right where it says that 48h slow fermentation removes 97% of gluten from bread. I do it once a week without any gut problems.

    That's not true man. I'm gluten sensitive and I have had a couple sourdough breads without any reactions. They were both fermented for over a day and they used heritage wheat strains (which have lower gluten to begin with). But the fermentation actually breaks down some of these lectins for sure, otherwise I and others wouldn't be able to eat it.
    Note: bread at the store labeled sourdough is not actually fermented. You'll have to go to a specialty bakery.

    It's not THAT gluten may be bad but HOW gluten may be bad.
    Humans have relied on bread for thousands of years and suffered no ill effects....until recently. I'm not the smartest person in the world, but even I can see that the sudden influx of problems nowadays is at a definite contrast to what used to be.
    Some things to consider:
    1) Wheat is ultra-processed now to create micron-sized granules of flour which is what are primarily used in fast food bread and store bought white bread. This area is used by food companies tactically, as the smaller pieces are rapidly digested and broken down far more than our ancestors used to encounter; essentially breaking down the sugars of the product rapidly which causes a spike of dopamine. This small size, however, also means the glutens are also broken down too quickly.
    2)Additives in breads are at an all-time high. Nitrates, sulphates, and phosphates might as well be "American secret spice" with how much the USDA/FDA put that in food.
    3)The Standard American Diet (SAD), already rapidly kills the good gut flora within by reducing the fibrous content and lactic sugar/acid content. Too much sugar causes candida blooms (which make you crave sugar). Too much oil causes E Coli blooms (which can enter your colon and cause Crohn's or Crohn's like symptoms). All of these are not the microorganisms you want growing out of control. What you want are lactobacillus and streptococcus thermophilus. They're good guys, there are also fiber-digesting microbes you 1000% need more of.
    Maybe people's intolerance to gluten is because their internal microbiome is crap because of things like SAD making your good gut bacteria die off and introducing worse gut bacteria which also weaken the gut and the natural symbiotic immune system.

      You're right, it's not gonna kill you right away, only through repeated exposure, the damage will pave way for other irritants that normally wouldn't be able to penetrate your gut lining, making you chronically sick because you can't heal.       @@AustenSummers but that is not entirely true. According to all studies I’ve read, there are no proven health benefits of a gluten free diet. However gluten free diets have been connected to macronutrient deficiency. There aren’t any good reasons to eat gluten free, if you don’t have any allergies or diseases that makes you sensitive to gluten.
      In short, there are no benefits of gluten-free diets, and the benefits of such a diet are only speculative.
      It makes me sad to see people like this guy, spreading misinformation. He is doing it with good intentions, but sadly much of what he says is questionable at best

    I don’t tolerate bread in any form yet in my crohn’s healing journey.. but I don’t buy this. Some of the healthiest looking and clearest minds I know (and follow on internet) consume fermented sourdough very often. People that are very in tune with their bodies. You’re projecting your gut issues onto everyone.. much like you did when you were pushing studies about zero carb.. then carnivore with honey but no fiber.. then carnivore with HELLA fiber. Quit jumping to conclusions based on personal ailment

    A healthy gut can process gluten. But not in excess. Antibiotics are much more dangerous to the gut and usual suspect for gluten and food allergies.

    Thanks Dr. Saladino for sharing such valuable information ❤ To me, bread and everything that contains gluten destroys me. Those products derived from grains inflame me for days, depress me, generate a lot of gas, dermatitis, irritation, and an abdomen that looks like pregnant. I even took a pregnancy test, because the abdominal swelling was tremendous.
    When I drink beer, which also contains gluten, I feel like I'll die in a short time, I'm completely intolerant to grains.

    Grains gives me horrible blisters on my fingers and thumbs called dermatitis herpetiformis. Along with leaky gut, bloating, joint pains, runny nose, itching sensations deep under the skin, fatigue and migraines.
    Basically my body thinks it's under attack as rogue protiens break down my gut lining, create holes and enter the bloodstream and so my body will resort to pushing those toxins out through pussy blisters in my skin and through mucus out my nose.
    I instantly regret it everytime I eat something I shouldn't.

      You need about 2 weeks to adjust. If it's something you want to eat regularly, introduce it slowly over 2 weeks

    I'm grains free since 2018 . I've made three tests so far with bead. Each time I've started eating any kind of bread the 4th day I'm getting gums inflammation and tooth pain . Stopping eating the bread makes mouth disorders disappear .

    Love you to pieces Dr. Paul, but imma send you a very important gem. I made a crucial discovery in trying to heal my autoimmune health issues in the last 4 years. Most vegetation “here” is GMO, and almost ALL of it is sprayed at some point before harvest. And it’s been primarily Gly pho sate, but recently it’s newly approved chemicals, so the producers and the F D A can say GLY pho sate “free.” But everything they spray/treat it with is chemical hell to all forms of life. We think it’s gluten. We’ve blamed the gluten for almost two decades now, but it’s not. Go to any other country where they don’t poison their crops, like Italy, France, or Germany. Eat bread there, and no flare ups. I now import my flours from chemical free sources. I can now make and enjoy my homemade sourdough breads, and my homemade PIZZA again. And feed my family, omg they are SO happy and I can sleep at night knowing exactly what I’ve made them. I’m not saying that eating bread should be anyone’s first choice of energy, let alone nutrients, but just like you enjoy daily mangos, fruit and dairy, the right breads will not wreck you. It’s NOT the gluten dear sir, it’s the GLY Pho Sate and other chemical cohorts.🖖🏽💚

I'm not saying he's wrong but that he shows sources supporting his own view, and we could all find sources supporting different views. Vegans would cite their own scientific sources backing their choices as well. Nutrition is complex and not one size fits all.

I've been maintaining 70-75 fat, 20-25 protien, and 5-10 carbs from mostly natural carbs found in avocado, some keto crackers and or fruit like strawberry. What fruits do you recommend and why?

    As someone who has gluten intolerance I can confirm that sour dough bread makes you sick. It was my favorite bread so I tried my mom’s fresh baked version, and got migraine and felt sick, even though I didn’t have gluten for several years. I read a study that 70% of population is gluten intolerant but most don’t know because it affects each person differently or because they don’t get tested.

      My auntie just got diagnosed with celiac disease at the age of 62! Now the entire family is getting tested. I didn't know the range of symptoms was so wide and so go undetected for many years 🤯

      @@margheritap.1187 When I was in Italy a few years back I ate everything with gluten, and nothing bothered me - food tasted much better, too. I had lots of energy and felt great. Then I went back to the states and tried bread and felt sick immediately. I really believe it's because most wheat is GMO and even the organic, non-GMO is no longer the same like it used to be in the US, because I can't eat that either. I don't know what Italians do, but their wheat had no impact on me. If you have to go GF, my advice is to stay away from most GF options, unless it's made from scratch. One of the worst "whole foods" are almonds and I used to use a lot of almond flour for baking. Ever since I went carnivore, my inflammation is almost gone. I was keto/low carb before this for over 3 years, and my inflammation was pretty bad on it despite many other positives I gained from that diet. I now understand why! Good luck to your family.

      @@haliam3666 There is no genetically modified wheat currently commercialized anywhere in the world. That being said, just because it isn’t gmo doesn’t mean its not hybridised to the max (making it more drought resistant, have bigger seeds, resistant to pests, etc). The ill effects have more to do with the use of glyphosate and other chemical sprays legally aloud on the crop. Organic can help but there is still chemical drift from neighbouring farms. Popular organic brands still have traces of glyphosate. Do more research on glyphosate and what it can do to your gut health.

      @@haliam3666 Yeah, I've heard that everyone is negatively affected by gluten, but it's just not immediately apparent because it varies in severity among people. My hypothesis for why trying bread after years of going without it hit you so hard is that our bodies 'get accustomed' to the toxins in the foods we eat, and so our initial responses to such foods become dulled. After years without it, we become more sensitive to the toxins in the food again, so when we try to eat it we get sick as a feedback response to not eat it again, or our bodies even want us to barf it up. Like an amped-up elimination diet food reintroduction when the food you try to add back into your diet doesn't sit well with you.
      Gluten has been linked to leaky gut syndrome (intestinal permeability) which can lead to autoimmune diseases, so I'm certainly not a fan of it. I know of one healthy culture in the past that lived off of raw dairy and bread, so it seems possible to incorporate it somehow. Though, it's been speculated that, in some way, the dairy 'protected' them from the bread, so if one has the luxury of ditching the bread entirely, that's probably better.
