How I Eat In a Day! 2021 Update

  • I split my time between Austin, Texas and Santa Teresa, Costa Rica right now and this is how I eat when I am here in Costa Rica...
Spending time here in the ocean (I surf everyday), sun, and warmth I can't help but think about how this is the climate humans evolved in...
Surrounded by myriad animals to hunt, bees with their hives and honey and many different types of fruit that come into season throughout the year...
Near the equator, food abounds in landscapes that have not been disturbed by human interventions, like monocrop farming...
I saw this when I was with the Hadza in Tanzania earlier this year, as well.
First and foremost, they are hunters. They literally live to hunt, speaking about it, dreaming about it and preparing for it constantly.
They also relish honey (which they are quite adept at finding) and fruit....
It's only when these more desirable foods aren't available that they turn to plant parts we might consider vegetables (leaves, stems, roots, seeds)...
My diet is now fairly consistent day to day, with a few ounces of organs either fresh or desiccated (from @heartandsoilsupplements), around 1g of protein/lb of body weight, fruit and honey...
I posted a photo taken yesterday earlier this week on here so you can see what my body composition is like right now.
I break all of this down in this video. I hope it's helpful for you guys! If you have more questions you can always email the team at Heart & Soil at radicalhealth@heartandsoil.co

I'm 73, a carnivore and eat once a day until I'm full. Most days, that's nowhere near the amount you suggest, still, I live with robust health; kicked cancer and type two diabetes to the curb eating meat, eggs and water. I think eating should be simple, like breathing - just do it without much thought.

Humans really don't need to eat that much, just at the right time and the right foods.

Siwy, good job getting over your diabetes and cancer. I am happy that you are healthy. However, I just want to be honest with you. My guess is that you were eating a (standard American diet (SAD)). This diet is in the bottom 10% of diets in the world. Now you are on the carnivore diet which is in the bottom 1/3 rd of all diets. As a result, you have seen improvements in your energy level and your blood sugars have stabilized since you most likely eat very little carbs. However, the saturated and trans fats in meat are high and are most likely going to become a large issue for you in the future. I would suggest that you switch out of this diet to a whole food plant-based diet. This diet has many benefits and would be happy to discuss them more with you. Please look at this video from Milton Mills if you want more reasons why a carnivore diet is not what you are supposed to be eating. th-cam.com/video/NMN1Zo_c7_A/w-d-xo.html

Recently read your book "The Carnivore Code ". I'm 6'1 and just over 13 years ago I was up to 265 lbs. I'm now 158. Stayed around 197 for many years. I credit your book for becoming so slim. I'm 61 Y/O and I'm in the trucking business. Just 5 months ago I put a Crock Pot in my truck. I never eat before 11 am or after 5 pm. I eat Deer and Elk, I buy at Sprouts or Natural Grocers, that comes from NZ. Also eats lots of Beef Hearts and Liver. Have tried Kidneys a couple of times and Ox Tail. I still consume Miso, Sauerkraut, and Macadamians. Not much on fruit Blueberries occasionally. Monk fruit sweetener only, and after consuming Honey for many years I now prefer Maple syrup. I am not sure if we actually have to find out what "works for us". if you are intolerant to foods like fruit, honey, etc, I think the solution begins with first realizing that 1. You're intolerant to that food and 2. That it's probably fixable (how?) because in many cases like this, it is seen that even when you exclude fruit and etc, limited only to the most primal part of our diet: Meat AND Organ meats. It is seen that when you do it long enough, then your body is able to handle Fruit, Honey, and of all quite well. For how long or if it's a long-term effect, I don't know. But doing so, adding in the Fruit, Honey, and Dairy (i guess), slowly.

Hi Paul, with all due respect, you're a young guy, very active, and your metabolism can handle the sugars from fruit and honey. As we age, our metabolism slows, we have less tolerance for carbs in general, and if we're in tune with our bodies and health, we adjust to dial back or eliminate these things. Having eaten lchf for many years (decades), I've discovered my "set-points" where I have started to gain weight, or my energy and vitality has declined. My suggestion to you would be to include the message that the way we eat and the way our bodies respond to various nutrients changes with age. When I was your age, I could eat anything and be filled with energy, but I'll be 68 in November, and I've learned to adjust what I eat to get the energy response I want and need, and to maintain my weight so that I can run the ridges and still bow hunt elk with my young hunting partners. Please consider including some guidance for those of us in different age groups so that people will understand that fruit and honey are not for everyone at every age in their lives. I want you to know how much I learned from your book, and I value your contributions. With that said, me and my bird dog will be out chasing Hungarian Partridge and Sage Grouse this morning, putting in our miles, and avoiding big old rattle snakes. Peace Brother...

I disagree. I ate keto for like 2 years. It was great. However, I see absolutely no reason to restrict fruits. A lot of advocates of keto and carnivore have gone to extremes with this issue of insulin. Nobody said you have to eat outrageous amounts of fruit. I typically eat around 80 grams of carbohydrates a day. I think most people can handle a few pieces of fruit each day and a couple of cups of raw milk if they are not allergic to dairy. I do not see any logical reason not to. However, people have developed this obsession with constantly being in a state of ketosis.

Your cells have so much lipids then. Fructose metabolize in the liver and turns to glucose like molekules and fat. It doesn’t spike insulin but glucose does. Your problem is not banana, your problem is lipids in your cells which interrupt insulin receptors. Meat is not human food, humans are frugivore. We don’t have large canine tooth, claws, strong acid production in stomach (That’s why people suffer from acid reflux, ulcers etc.) We should eat fruits, vegetables, seeds and nuts. Also vitamin B12 since it is produced by bacteria if you are consuming very steril foods and water.

150 to 200 grams of carbs a day? This kind of blows me away. Obviously you are ultra fit and active. You primary job is your health and fitness, where most of us have much more complicated lives. I am mid sixties, own a business, and do as much as I can to stay healthy. I am not out surfing in Costa Rica. No way will I eat that many carbs, no matter what the source or matrix. Eating low carb has been a game changer for me. I'm eating carnivore for a while to do a reset and drop a bit of weight. That has virtually eliminated my joint pain. Again, a big eye opener. Eventually I will reintroduce other things like a few berries, mushrooms, low inflammation vegetables etc. I appreciate the work you do. I have your book on order. I follow your podcasts and those of others. My position, honestly, is that I am just as competent at creating my own diet as any expert. Every single thing is recommended in one camp and demonized in the next, and all supported by studies. In some cases the claims swap back and forth. When I hear that a carnivore advocate is eating this many carbs, I just slump into my chair.
I'm doubling down on avoiding processed food, wheat products, and excessive carbs. After that, I feel the best authority on what I need is my own body. Some things like jalapenos, you will have to pry from my cold dead fingers. I'll find a study to justify it. Try something,...listen,...repeat.

Just goes to show. NEVER EVER follow anyone’s advice blindly. With huge respect for Paul I say that we are all different, living in different climates and may or may not have different health challenges?
So much science thrown around also , but the tribes of the world are the true measure of success, but only for them. Not going to work for someone in the northern hemisphere I d say.
The sun, and sea are a major contributor to health in my experience, the circadian rhythm also, getting hungry also are critical. Then to add further possible confusion, we change over a period of time, why I’m not sure , but I feel I do. Seasonally. So confusing.
The best skills to learn are to feel and understand your own body.

Great video!! Thanks for the upload Paul! Was curious as to whether you were concerned about combing fruit with meat in same meal so this explains it. Just wanted to add my own experience with a meat and fruit diet about 8 years ago as it may help some people. Felt incredibly cleansed and healthy and looked great. As I was training really hard doing bodybuilding/powerlifitng 6 days a week I noticed my sex drive went down significantly. One day I decided to have 1 cup of oats and got an instant hard on after weeks of struggling lol. One piece of advice I would offer to anyone training hard physically and may be experiencing symptoms of decreased libido is that you may benefit from a small amount of starchy carbs in your diet along with what Pauls eating. Something like white rice or sweet potato if you tolerate it. If you're feeling great then by all means don't change a thing! This diet is great. (Also need to mention that the meat I was eating was quite lean so definitely wasn't eating enough animal fat which also has a very positive effect on libido). Thanks again Paul

Some of us have a genetic predisposition to hemachromatosis. I found this out last year. Previous to being tested, I was practically carnivore and all this beef caused my ferritin levels to skyrocket to the point where the doctor thought I was an alcoholic. With dietary changes, (namely cutting back on the beef), supplementation with IP-6, Quercetin, among others, pairing meat with dairies like cheese and yogurt, I've been able to get my ferritin numbers down to the 80-90 range. There were 5 phlebotomies in there as well. Once I started consuming beef more than 2-3 X week, the ferritin rose again. What have I learned? I was advised once to eat all the beef I want and just get the phlebotomies, but since you can only do that every 6 weeks, I've learned you can't out run rising iron levels with blood letting. Or with yogurt, or cheese, or IP-6. It's imperative that I cut back on beef. So, I MUST incorporate more eggs (and I do not weep as I love eggs), chicken, fish, turkey and to a lesser extent, pork.
I've also learned that consuming 1 gm of protein per lbs. of desired bodyweight does not work for me. I'm 200 lbs., 5'6", just turned 57. I've never weighed this much in my life. My bodyfat has never been this much and I cannot get under 190. The last time I did that was 4 years ago where I fluctuated between 175-188, depending on the season. I am sluggish. I have had the worst chronic fatigue I've ever experienced and the brain fog is brutal. The 40 minutes I spend in the gym beat me up. Any activities past noon- 1PM are usually out of the question. Energy wise I am spent.
I've done better with my protein levels down around 120-130 with a macro distribution that more or less resembles Barry Sears' Zone Diet.

My Father had this as did his Father. I have one gene mutation and considered less likely to have an issue in the future. However, my last bloodwork did have my ferritin high (post hysterectomy FYI). I too need to watch my beef intake somewhat. I’m happy you figured this out since it can be dangerous. Thanks for sharing.

After studying continuous glucose meters, I now know some like you will thrive on a 150ish grams of carbs while other will be ok in the 50 to 80g.
The real answer is in the our genetic code, most importantly polymorphies.
