Chipotle Guacamole Recipe - Cooked by a Former Chipotle Employee!

  • I wanted to make an easy, how to video on making a recipe so similar to Chipotle's guacamole you won’t be able to tell the difference. I also give cutting tips for dicing cilantro, jalapenos, and red onions. This is one of my favorite things to make! I hope you enjoy!
    Ingredients:
    Four Avocados
    2 Tablespoons Cilantro
    1/4 Cup Red Onion
    1 Tablespoon Jalapeno
    1 Lime
    1/2 Lemon

      Not very precise measurements, do chipotle allow staff to make up their own amounts as they wish?

      Actually its very precise. Also, as a cook, its encouraged to taste your food. If it lacks salt, add salt, lacks acidity, add more citrus.

    Chris, you are a Saint for sharing these recipes. I'm a Teacher, and the Head Hanchos over at Chipotle just wanna get rich and charge outrageous for their food. THey just don't understand how $12 dollar burritos just are way too expensive for the middle class. Because you've got to get double meat, and now, they sure make small portions. So, I'd rather go without than pay their prices.

    Your recipe videos are great! Do you know what type of sour cream they use or how they get it to the consistency it is?

      Thank you!! Normal sour cream, but whip it with a whisk until it is a pancake batter consistency.

I have same questions as everyone else, but you can't figure it out -- unless you read a jillion comments. Make a video like "How to make a sour cream (or creama) like Chipotle" and show which type of sour cream at the store, etc.

    Pro tip: a sharper knife will reduce the onion gas given off.

      not really true, a sharper knife would only be true in that statement if you cut it a smaller amount of times, but to stop the fumes you take the root out of it and you're fine.

    Also i find that peeling the onion first then rinsing it in cold water helps with the onion tears

    I use my square holed potato masher for avocados and boiled eggs, things like that. Works better for me than the fork. Looks good tho, love chipotle!

    Literally the only video I've ever seen where chopping jalapenos didn't come with the warning "when chopping jalapenos don't include the seeds, cause that's where most of the heat is". I suspect I've heard that over 100 times before.

      Chipotle includes the seeds in the guacamole, salsas, etc.

      Yes, I sure wish that Saint Chris would answer this question for us too. We tried to saute them, but they didn't turn out the same. I'd love to know how to do it exactly.

    I literally just do avocados, cilantro, lime juice, and salt. Put it all in a food processor and process until smooth. Perfection.

    Chris thank you for these lol also for tortillas should i just use a pan? I usually just heat my tortillas in a pan with no oil to get them soft but should i use a plate to put over it? Or a lid? I like how steamed the tortillas get

      You can, I personally microwave them for about 30 seconds. This steams them up a little!

      Did you use table salt? If you just use kosher it should be completely fine.

      You need to learn about the different types of salt. Kosher salt and Himalayan salt is not as strong as table salt. Read about kosher salt and will explain everything. Have a great day.
