That said, butternut squash is one of the things I ALWAYS buy pre-cut or even cut in half and sold in halves in plastic wrap. It’s just too cumbersome and potentially dangerous if you’re not perfectly steady with a razor sharp knife. It’a just not a risk I’m willing to take!! But this meal looks absolutely delicious!!! As a senior I've cooked a many pork chop and in the later years butternut squash meal. But after seeing this it's a must try this for me. Sounds and looks so delicious. I've watched America's test kitchen for so many years love it as well and your channel as well.
I'm also not an applesauce and pork person. I love home made applesauce. Chunky, with cinnamon. But I also love cornflakes breading. I would eat my porkchop plain, cut to bite size pieces. This is a beautiful, enticing meal.
Julia, I would like to try this recipe using extra firm tofu! I am a vegetarian and this seems interesting and intriguing to try! Many thanks. I would serve this with your roasted butternut squash but instead of using pomegranate seeds, I would use candied craisins! MANY THANKS! :)

growing up my mother made pork chops and chicken this way. Only difference was that she baked them on the wire rack you set them on. We’re really good and brought back good memories….😁😘
Just made this and froze some. I used pork tenderloin instead because that is what I had. It was so good it was moist and crunch. 100% recommend people try this recipe. The dijon paird so well with the pork!
A little tip for the cornstarch coating : Put the meat and die cornstarch in a ziplockback, close it an shake it. Clean and easy way to coat all the meat at once without the mess ^^

Pork chops are challenging for me. If it's not coated , it is dry. Then what do you pair it with without needing high carbs ? I appreciate this Julia , this is one balanced meal my brain is not frazzled.

We love carbs but are trying to get healthier versions into the diet. This squash is perfect. I also have a fabulous recipe for Mac and cheese using butternut squash that cuts the calories in half
Yummy, I feel her pain with the Applesauce. OPIMH (other people in my House) do the same thing with my Pork, they also drown my Salmon in Lemon Juice before even tasting, Cranberry sauce on Chicken and Mustard on my Corned Beef and Cabbage... it's utter madness I tell you.
