- my favorite fruit cake can be made all year round. moreish moist and well worth the effort. recipe written below.
large bowl
3 and 1/4 cups sultanas
1 and 1/2 cups raisins
1 and 1/2 cups chopped dates
3/4 cup currents or dried cranberries
2/3 cup glace red cherries cut in quarters
1/2 cup chopped dried apricots
1/2 cup chopped dried pineapple rings
1/2 cup bundy rum or any rum
leave covered for 6 hours stirring every hour
250g butter at room temp.
5 large eggs or 7 small eggs at room temp.
1 cup brown sugar firmly packed
1 and 1/2 cups plain flour sifted
1/3 cup self raising flour sifted
1 tea spoon mixed spice
if decorating extra cherries and whole blanched almonds
pre heat oven 140 degrees C
23 cm springform tin
bake for 2 and 1/2 hours
2 table spoons rum brushed over the top
cover in alfoil leave to go cold
wrap well store in fridge will last 3 months
leave out of fridge for 1 hour before serving

I use St Angst brandy and use aluminum foil to wrap the cake and store it in the cupboard for 6 months. If I ice the cake I have stored them for 3 years.
