1 is enough here in the Philippines because we have a lot of stores or 7/11 to buy some water and some times you can refill your bottle in karendirya for free.
2 For 200km, For < 100km I also bring 1, the secret is convenience stores are everywhere. you can even ask water for free if you want on rolling stores you see in the streets, just dont forget to thank them.
Looking at the streetscape, traffic, and natural scenery, Manila and Taipei do seem similar, especially in the way cars and motorcycles are intertwined on the roads.

I've only been riding around Pampanga for about a year now. At first it was out of necessity (no public transport where I live, health and fitness reasons, no driver's license yet.) The ride slowly but surely grew into a simple, yet constant joy that keeps me going through life. Since Pampanga is 95% plains and flat roads, it would be one of the best places to just cruise around, space out (not entirely of course!), and relax.

Not too much traffic back then. Moved to Los Angeles and ride Griffith Observatory 3x a week when I lived in Glendale. The roads in Manila hardly changed since moving to US 20+ years ago. Riding through traffic has always been that way albeit less dangerous than riding US streets. I miss those weekend rides to Tagaytay and Antipolo. Would love to try that one-shot Manila to Baguio ride one day.

Gravel is the way to go here in PH. As you mentioned, the road conditions here are not so good so gravel/mtb is the better option. Take note of these places : Tagaytay, Vermosa, Villar Avenue. All in south of Metro Manila. Hope to ride with you and your crew someday!
Our hills in Region IV-A will try to devour you but try to conquer most of them while you’re in the country. Tikling and Teresa are in that Region, both part of Rizal. Manila is a different region called NCR also known as Metro Manila. Try Bataan-Clark loop too. If you’re up for it take it to Baguio in 1 go
Welcome to the Philippines! For me... I have once have a 32 oz Aquaflask... My friends laughing at me (T_T). Now I have only a 750 ml... pero I still find it Bitin... now i ride solo, i can bring whatever bottle size i want (^_^) Go to Tagaytay, lots of interesting places there! Then you can go down the beautiful scenic view of Sampaloc road then ride the way all up through Sungay! it's an awesome experience.
Like your friend said, Tagaytay is a highly recommended spot for cyclists. Around a hundred kms from Manila (2 way) with tons of elevation and scenic views. The breeze is also cool so it is definitely a must if you are going to visit PH again. But if you are in for gravel adventures, there are some places in Rizal that can be fun when it comes to trail exploration but if you are really into gravel riding then you must go somewhere north (Pampanga, Nueva Ecija, Tarlac) as most of the gravel races are being held there.

You should contact Jeno Cuenco if you want to try trails around Pampanga, Tarlac and Nueva Ecija. Those are Provinces north of Manila. He knows so much about those routes. He is also a youtuber

Having moved to Sydney, I miss Manila's night rides the most. Over here, the city is dead past 6pm, and the roads are dark as hell.
