a Few things I do, extremely high heat... Sear @ least 2 minutes per side in olive oil, seasoned with salt, pepper, paprika, red pepper, dill weed, and curry powder. right before you take it out, baste in butter and add coriander seeds to give it that citrus touch. Serve over seasoned rice and vegetables. Mmmm a delight.

@@Pimp231 great, I’ve modified my recipe a little bit more over the years. Now I add minced garlic or half chopped garlic cloves. The new recipe for mine now is creole seasoning, black pepper, parsley, dill weed, curry powder, coriander seed, paprika, sear both sides really well with the season dusted on and of course use olive oil and finish in butter if you want. And then I drizzle siracha sauce on mine with rice. Happy cooking!

These comments are ridiculous. Her tilapia was very thin. So, she cooked one side on the pan and basted the other side with the hot butter, ensuring both sides are cooked. Also, don't forget some carryover cooking will take place as well.

thanks, nice and simple and quick! i normally dredge it in flour, then sear in in olive oil and finish it like a chicken picata sauce, adding butter, lemon, white wine and capers, sometimes mushrooms as well....this fish works well with that sauce and serve with rice and asparagus.... thanks again, think i'll go your route tonight, feeling lazy😘

Yes, whatever kind of fish when we do this kind of recipe we need to flip the other side make sure fish is well done, is not like when we cook egg (estrellado) we do not need to flip it , just cook in a medium heat not to burn the sides of the egg white then just spoon hot oil on top of the egg to make the cooking balance. Make sure cooking fish and meat must be well done. I'm not a chef but because I love to cook, so many challenges I never gave up! I learned from my mistakes.
