    People from philly can be a pain about their cheese steaks. An original involves thinly sliced rib eye and cheese whiz. But I love it when people put their own spin on it. This looks delicious

      Only one place in Philly uses cheese wiz and they were not the inventors of it.

    I'm usually a big fan for your recipes and even more of your enthusiasm, but, so many things wrong with this one man.
    1. That's no way to cook a steak. The water from the onions and mushrooms will make it boil and grey instead of that nice sear on the meat. Also sear the meat first, then while it rests, cook the onions and mushrooms in the same pan so the water from them deglazes the pan as well as soaks in those meat flavors.
    2. You said cut against the grain but cut with it. Ideally for the skirt steak, cut at an angle.
    3. Skirt needs some help and is best if marinated overnight to tenderize.
    4. You forgot the mayo in the beginning so tried adding it in the end by lifting the steak. Good improv for the camera. :P

      Ok I just read some of the other comments and I realize that you were tired at the end of a a long shoot and had a brain fart when you cut with the grain. That's an honest mistake as are the others.
      #1 however is still just wrong technique. :(

      We do work with Hellmans on some of our videos. Which I'm totally cool with. I use the stuff at home. Love it. Plus, they help us to make the content. Filming these videos ain't cheap.

    Sliced green bell pepper, 1/2 cup red bell pepper, 1 tb. Butter, 1/8 cup of red wine, 1/8 cup of beef broth, s/p, 2 garlic cloves. Remove veggies ( leave a little crunch to peppers) and strain au just for dipping! Now toast Italian sub roll, add light spread of dukes mayo, meat/onion mix, veggies, drizzle of red wine au jus, layer 4 slices of provolone cheese and broil on lower rack till cheese melts! Add bread and butter pickles to mine!

    You're not cutting the steak against the grain, or is my english bad? You're cutting *with* the grain, correct?

      Mark Sandy Cut AGAINST, that way it breaks up the strands/fibres of meat and they become more tender, easier to chew.

      thagrammarnazi Yes, of course. I have to cut at a 90° angle to the direction of the grains. But in the video it seems as if he cuts at a 0° angle *with* the grains. I thought the 90° angle shortens the grains so a thin slice of meat has only very short fibres. Am I wrong?
      Please excuse me, I don't eat steak every day (in fact, hardly ever). Thanks for correcting me.

      He IS cutting with the grain but you should cut against it (90° angle/perpendicular)... which is what he said in the video even though it's not what he did.

    I think some people missed the title "DJ BBQ's Philly Cheese Steak," I didn't think for a second this was supposed to be an authentic cheesesteak. For all the poo-pooing and nay-saying, and criticizing of technique, the end product is pretty fucking delicious. In my book, that's all it takes to make good food. If you enjoy it, it's a win, and all the other pretentious BS about doing it the "right way" can go right out the window. Also, never question the body suit. It's fucking patriotic. /MURICA

      +TouchyBanana No, he shouldn't have, because the two terms are synonymous. It's like removing the word "Chicago" from Chicago Deep Dish (if it's a deep dish pizza, it's roots are distinctly tied to the Chicago Deep Dish pizza and thus it's implied) -- the term "cheesesteak" was conceived as a way to describe the sandwich created in Philadelphia. And here's another stinger, it was never referred to as a "Philadelphia Cheese Steak" by the original creators, because why would they be self-referential in that way? It makes zero sense. It's like people in Boston referring to baked beans as Boston Baked Beans. They were just baked beans in the style we made them. The phrase was coined when that particular style of baked bean became popular outside of Bostom; like Philly Cheesesteak, a term which only became popular when the sandwich grew in popularity outside of Philadelphia.
      Maybe instead of requiring him to change the name, you and everyone else who stuck their noses in the air should be less elitist. Food is food, bro. If all of us stuck to the recipe, you wouldn't have the kind of diversity we have now -- how many renditions of Lasagna, Carbonara, and Hummus do we have? All with traditional preparation methods, but all dishes that have deviated and expanded from their original culinary intention. Personally, I like my Cheesesteaks either with mushrooms, peppers, and onions, or with lettuce, tomato and cold onions -- and they're both still cheesesteaks.

      What he meant by it is. You cut across the grain so when you lay it into the sandwich, you will bite and it will rip off with the grain. It's generally what you do if you're cutting steak into strips

    Love the idea of skirt steak for this sandwich. But he said he was going to slice across the grain and then proceeded to slice it with the grain. Must have been one tough sandwich.

      Kristin Wright I actually did a taste test comparing skirt steak with ribeye (the usual steak used) and we all preferred the skirt steak. so I'm quite glad I watched this before I tried making it.

    I'm so glad I watched this video. I just made Philly cheesesteak for the first time, and most recipes suggest ribeye for the meat. I tried both ribeye and skirt to compare, and we all thought the skirt steak was a lot more flavorful than the ribeye. You saved me from a bland sandwich!

      Mayo and KETCHUP are ALWAYS on Philly steaks. Sometimes tomatoes are used. People like "steak sandwiches" and hate "philly steaks" but love to call their "steak sandwiches" "phillies" for some reason... They are not...

    Looks good, but I wouldn't call it a "Classic Philly." A Philly is Steak and Cheese and Onions.
    No Mushroooms, No Bell Peppers, No Tomato, No Lettuce, No Mayo. Not that you can't put those on the sandwich if you like them. But it's not a "Classic Philly" at that point.

      Nope. A cheesesteak is the cheapest shaved steak you can get, with the cheapest melted cheese you can get (Cheese Whiz is traditional) piled high on a soft hoagie roll. You can get it wit or witout caramelized onions. Traditionally they don't come with bell peppers or mushrooms.
