I already tried this recipe. On my first try, the butter in the dough is slightly melting, I can't wait to chill it for 2 hours so I put in the freezer for few minutes and it became manageable to mold although it's melting a bit again. I managed to bake it with a good shape and tasted really good. I used purple yam paste as filling. But on my 2nd and 3rd try, I don't know why but the dough is really unmanageable, soft, sticky and the butter is melting fast. I can't even use a molder because it's sticking and breaking. It even spread while baking so it didn't retain the shape. I added more flour to make it manageable but worried that it won't taste the same as the first. It's really frustrating. 😭
You can try. Make sure you wrap the dough and store in air tight container to prevent the dough get dry. Let it sit at room temperature until it’s malleable enough before proceed to following steps

冷冻的咸蛋黄有生的也有些是熟的。我用熟的冷冻咸蛋黄,解冻后就可以直接用。

Hello, if I would like to make the normal 燒皮 flavour, what would I substitute the matcha powder with? Thank you! :)
you can omit the matcha powder or substitute with custard powder to make it more like traditional mooncake color.

短时间吃不完放冷冻,要吃的前一天移到冷藏室解冻,然后回烤几分钟。
