Hi Kenrick, that rice is so good you have to cook at lease two cups, and of course that depend on how many people you will be cooking for. To cook two cups of rice, you will need 4 cups of water, if you're using coconut milk measure it with your water to make sure you're adding the correct amount. Think this is more Trinidadian style pelau rather than bajan I dont remember putting peas or coconut milk in a bajan pelau I try some Trini pelau when i was over in New York and that was so nice
This is a "Trinidad style Pelau" but the usual way of making it is to add the seasoned chicken to fresh browning (caramelize the sugar in pot to a rich dark brown colour). There is no curry in traditional Pelau. The addition of chicken stock is a good way to enhace the flavour profile. I am Trinidadian and make no excuses for being a Pelau Police.
Hi Jinny, I don't remember how much rice I used but when cooking rice its always 2 cups water to 1 cup of rice. you just have to adjust the other ingrediencies to suit
Hi Yvonne, Sorry to hear that you were not happy with your results. I'm not sure what went wrong, If the rice did not cook correctly, you should check the brand you used. I always use uncle bens it come out the same way for me all the time. Make a few changes and give it another try, see what happens.
