If you've been to a restaurant in the last few years, you’ve likely seen the words gluten-free written somewhere on the menu. But what exactly is gluten, and why can’t some people process it? And why does it only seem to be a problem recently? William D. Chey unravels the facts behind celiac disease, wheat allergies and non-celiac gluten sensitivity.

As someone with celiac disease, I don’t mind the fad. the fact that so many people are jumping on the gluten free bandwagon means that companies are making more gluten free products.

It can also cause issues though. Because its a fad, a lot of those companies are making food that is "made without gluten", not "gluten free". These foods can still have more than just trace amounts of gluten, causing issues for those with celiac disease.

I'm with you on that statement. I'm not celiac, but my mother is full on. Finding foods that was actually gluten free was really hard since almost everything wanted add some gluten product even to none gluten type foods. Then the early "Gluten free" stuff was kind of odd tasting, like they didn't know how to season foods without the gluten products, which is REALLY weird... Either that or my mother just had no clue what she was doing, wich is probably the case =^.^=

As a celiac person I am glad companies are making bread etc free of gluten because we do need that but we can consume legumes, potatoes, hole grain rice, eggs, meat, salads fruits fish etc. I had to learn how to make rice bread and is nice and economic.

you are right at first glance but there is a reason they have to write that because of cross contamination , a mashed potato can share the same bowl or cutting table a bread was or the factory machines process multiple food products, this cross contamination can be deadly to some people or cause a reaction. this is exactly why if you buy almond for example u see a label that it was processed in facility that has traces of peanut or soy ( this is a label for people of allergy to be aware) a label that says free of X or Y means you can rest assured there is no cross contamination. oat for example is gluten free but it is usually processed with lots of grains that has gluten and thus they never put on the label that it is gluten free unless it is a dedicated facility only grows and process oat.

I've been celiac since I was two years old. As much as I hate being judged for my apparently now hipster disease I began to enjoy the fact I don't have to go to a health shop for bread!
My whole childhood revolved around what I can and can't eat and it developed into an eating disorder later in life. Now there's gluten-free stuff everywhere but I prefer rice cakes to the bread, and I'm not bothered about cakes and stuff, now I'm a grown-up I'm more carb-conscious, and there's now a market for gluten-free overly processed pastry and velvet cakes that I have no interest in eating lol!

I highly recommend watching the "WHAT'S UP WITH WHEAT" documentary. It talks about how wheat in our country is harvested way before reaching full maturity and as a result, causes many people to have a sensitivity to it -- not necessarily an "allergy" as much as not being able to digest the un-ripened food -- like eating an un-ripened apple or peach, that results in stomach issues. It's VERY interesting and makes sense.

If you know anybody with any kind of allergy, you should understand how careful they are while handling anything which might cause trouble. You will never see someone with fish allergy mindlessly shovel fillets into the mouth, for example. This so called gluten allergic guy cared only when he ordered, but not when he put things in his mouth, i.e. his mindset doesn’t have it as a real problem.

This video was so helpful in finally understanding gluten and how gluten-free products are becoming increasingly popular. With all of the talk we hear about people going 'gluten-free' it was surprising to learn that there are really only 3 main issues a person may have that would require them to cut out gluten from their diet. Because Celiac Disease and wheat allergies aren't all that common, it either means that many people have a non-celiac gluten sensitivity or (more likely) are victims of the nocebo effect. The nocebo effect, in my opinion, explains this recent gluten-free craze. I do believe that if your mind is set that a certain food will cause a bad reaction, that its more likely that it will end up causing problems. On another note, its reassuring to learn that, although a gluten-free diet is becoming more and more popular, gluten isn't harmful to those of us without any sort of sensitivity.

My mother autodiagnosed herself with non-celiac gluten sensitivity, although it looks more to be a fructan intolerance (she has also problems when eating fruit). Because she had a very poor nutrition in her childhood, it may as well be true that she has a sensitive digestive system that improves on strict diets.
The issue here is that she one-sided decided that my daughter has the same problem that her (spoiler: the baby is okay, 0 problems here) and we had some legitimate quarrels around my kid's diet. Now I've banned her about bringing this topic on again because the situation was just unbearable and we couldn't have a normal conversation anymore.

I would be willing to bet, if more people received Celiac testing, it would be found to be more common than is generally reported. I and two of my children have been diagnosed, and it took 43 years for it to be diagnosed in my case. I just thought I had a bad immune system, and was diagnosed with almost every kind of digestive disorder before I finally acquiesced to a Celiac test (which I, a lifelong lover of pasta, pizza and many kinds of breads, thought was a ridiculous idea).

As soon as I went gluten free my grandmother was telling me how she thinks it would be good for her too since gluten is so bad for you and I was like gluten is not bad. The foods I eat arent healthier they just don't have gluten just like how nut free foods aren't healthier they just don't have nuts. I have gained weight since going gluten free however I no longer feel like there is a spiked ball in my abdomen so I am happy being a little bigger.

i just got diagnosed today with a gluten allergy, i’m very sad about it. I’m currently recovering from SiBO and it’s taking quite a long time to get over it, and it can take much longer to completely eradicate all of the bad bacterias, yeast overgrowths, and the one parasite that’s taken over my Gi tract. All i could think about the last 2 months was that i can’t wait to have pizza and ice cream and wings, or some McDonald’s or Taco Bell, all my favorite foods that i had to completely cut out, just to find out that it’s highly likely that i won’t be able to eat them even when i am completely treated from SiBO... And that’s disappointing, but now that i think about it, the last 2 times i’ve had really bad setbacks after starting my SiBO treatment came
from eating Gluten, the first reaction coming from eating my favorite Steak Sandwich from a restaurant that i’ve gone to for years and have eaten for years, the other reaction coming from eating wings that were breaded. The first reaction i had was a really bad inflammatory reaction, where i was super bloated, had great abdominal distention, couldn’t eat anything no matter how little, and this lasted for a few weeks and about an entire month to completely recover from. Then when i was feeling good a month later i had wings that i found out were breaded before they were fried, and another reaction made me feel so nauseaous a couple weeks, hard to get an appetite, again couldn’t eat very much. Each time making me lose some weight, it’s tough being highly sensitive to Gluten. I used to make jokes about gluten sensitivities but that was before i ever dealt with any digestive system problems, and now that i know that i am sensitive to Gluten and have had experience dealing with reactions to it, i wouldn’t wish it upon my worst enemies. It’s very scary and traumatic to experience first hand, so don’t make jokes about people who want to eat Gluten-Free food...

Another thing that might cause these reactions is that Round-Up, or Glyphosate, is sprayed on wheat and other grains liberally throughout its growth and then it is drenched in it before harvest to release more wheat bulbs. We are eating large amounts of poison when we eat Wheat, Barley, Rye or Oats. And though Oats doesn't technically contain Gluten it does contain Avenin which causes the same problems.

Growing up gluten free after the age of 12, I vividly remember the day we were served couscous (which the owner had claimed is "gluten free"). Later that day we were experiencing stomach pains, only after that did we discover that couscous is made almost entirely out of wheat!
What's interesting is that prior to going gluten free, we had no trouble consuming wheat products even in large quantities, which leads me to believe it's not a case of placebos that people experience symptoms despite not being celiacs, but rather the body is not designed to handle wheat, most of us have just forced it to get used to it from an early age; symptoms are stronger the more sensitive to it you are.
With that said, I'm all for the gluten free bandwagen, being able to consume everyday groceries in a healthier variety is a much welcomed change!

The fear of gluten equals mass psychosis. I actually bought some salt recently that said gluten-free on the label!

As a person with celiac disease, it is helpful to know what precautions (if any) companies that produce goods are taking to ensure that things like salt aren't contaminated by flour etc. in the factory that produces them. Salt can contain gluten for this reason. So can some spices. Many foods that say gluten free are actually allowed by the FDA to contain trace amounts of gluten that have potential to harm people with celiac. It is truly maddening, but as far as people following the fad go, what you say is not totally untrue lol

I’ve seen gluten in almost every kind of food, since wheat is good for texture. Always helps to check.

I found this to be not only entertaining, but also very informative. And it was not skewed either way. More likely than not. It's a combination of people having more sensitivity to wheat today. And the other half of that coin, is people who are just jumping on a bandwagon. I don't have this issue, and am glad, because I enjoy bread and bread products very much. But if I did, at least I would know how to get rid of it. Because there's so many gluten-free products out there now. A person doesn't have an excuse not to enjoy what they want in a gluten-free alternative.
