Steaming Hot Mutton Dalcha with Ghee Tempering

  • Steaming Hot Mutton Dalcha With Ghee Tempering
    INGREDIENTS:
    Oil - As Required
    Mutton - 500 gms
    Whole garam masala - 2 tsp
    Garlic - 10 cloves
    Ginger (crushed) - 1 piece
    Chana dal - ¼ cup
    Tuvar dal - ½ cup
    Turmeric powder - ½ tsp
    Eggplant - 300 gms
    Mango - 1 no
    Drumstick - 2 no
    Onion - 1 no
    Tomatoes - 2 nos.
    Mint leaves - 1 bunch
    Coriander leaves - 1 bunch
    Chilli powder - 1 tsp
    Water - As Required
    Ghee - 3 tsp
    Cumin seeds - 1 tsp
    Fenugreek seeds - ½ tsp
    Curry leaves - 2 springs
    Salt - To Taste
    DIRECTIONS:
    Heat oil in a pan, add mutton pieces fry them , till they turn into golden brown color.
    Then add whole garam masala, garlic, crushed ginger, soaked chana dal, toor dal, turmeric powder, eggplant pieces, mango, drumstick, onions, tomatoes, mint leaves, coriander leaves, chilli powder, and add water cook till they are soft.
    Heat ghee in a pan,add cumin seeds, fenugreek seeds, curry leaves, onions, salt & saute it for brown in color and transfer the meat mixer cook it some more time. Then switch off the flame.
    Delicious Mutton Dalcha ready to serve with hot rice.

    I’m very grateful to you, for teaching me how to start cooking and turn out to be a good one. Generous amount of curry leaves will bring out the flavors. In Usa I feel very bad using very little curry leaves in my cooking. 3 strands of curry leaves cost $1.5. The dish you prepared has lot of protein and vitamins

    Sir, plz address cost of spices, fresh as apposed to dry. Cooking food properly in the Indian traditional , spices need to be available at reasonable prices.

    You should have such dhalcha with dindugal style of biriyani, that's when the combination would be super delicious. (if you are using such combination, just use thoor dhal and not the other one)
