Finally I found a cook on TH-cam that has the same issue I do...I NEVER seem to cook in the right size pan lol. My eyes are bigger than my skillet I guess. And I don't know how to cook "small" lol. This looks delicious and I'm absolutely going to make it!
I have a chopper like you have I bought at a fair grounds It is 25 year old I chop eggs, pickles, onions carrots. More and.more items I love it. Hasn't broken yet. I hand wash only.

I make a very similar dish. Only thing I really do different is cook onions and celery and at the last minute add the garlic down in the roux to caramelize them a bit. Brings out a bit more flavor.

I also grew up learning how to cook good 'ole country hearty meals for our family, and the extra farm hands during harvest, hay& straw bales, corn shelling, etc.....But I don't ever recall using or making rotel gravy...or actually cooking my potatoes in with the gravy while it thickens. I learned something new from you! And mommy always used bread crumbs or oatmeal in her meatballs. I think you used flour. So happy I found you. Well I made my own version of this recipe. I added frozen chicken meatballs roasted tomatoes carrots some red wine and brown sugar. I spiced it with Mexican spices and it’s really looking and smelling mighty fine. I did slice my potatoes the same way you did. I really think smaller is better. The potato shapes add to the homemade look. I just found you yesterday and I’m loving my new dish. Thank you 😊
Just watched this video Talli Faye, it's a good'n! I wouldn't worry about your hands being dirty, you have a good heart, therefore clean hands! But... Last century I was a US Army medic, and I would be concerned about getting the bandages wet and getting an infection. Also in the olden days, I was a bartender. And we avoided twisting off beer bottle caps with our hands because the ridges around the bottle caps leave microscopic cuts in your hands, especially on a busy night, not noticeable until you start cutting up citrus things like limes, lemons, and pineapple for the foo-foo drinks; stings like lightning. But I probably wouldn't wear a glove either.

Mom taught me that potato slice method back in the ‘50’s. She sometimes made home fries sliced like that.
