You can add 3D printed parts to the seat clay model. To have a realistic seat frame structure in place in order to determine the gap clearance and volume.
This is used to create the surfaces that are then scanned to create a digital model. You can't 3d print anything without a digital model. There are limitations to how we can visualize 3d objects on a 2d screen. So Clay will be with us for some time to come.
What should I study to become a clay modeller?
What do they do with it when it’s done? Do the digitize the dimensions or to that manually too somehow?

Pretty sure it will never replace it. To do a real surface is always different then to do it on a computer and 3d-print it.
