yeah i noticed that too. . guess it didn't make the edit. add after simmering the soup for about 20 minutes, add 1/4 or 1/2 a can, depending on how much soup you have and simmer down for another 10 minutes. enjoy!
you wouldn't have to roast tomatoes or peppers or carrots etc. i just roasted pumpkin and squash because it's so tough & easier to remove skin after roasted.
The color of my soup came out disgusting, but it tasted delicious. I've added carrots and mushrooms instead of squash and pumpkin. Thanks for the great recipe!
This is and Anna Thomas' Green Soup (on Food52, it's also super healthy) are 2 my favorite soup recipes, particularly during the fall and winter since they're so warming! If you like thai flavors and spice, I like to add 1-2 thai chiles chopped (seeds removed). I also use lite coconut milk to cut a little of the fat down. Sometimes Ill put a 1/4 avocado chopped on top too, or some flax crackers broken up for crunch :)

I think it's titled "Detox" because it's healthy and all natural. If you make your own V8 from scratch like this, you'll probably get rid of any preservatives and unnatural ingredients that might be in V8 to keep it fresh. Maybe V8 isn't a good example, but imagine having this fresh soup instead of the same kind from a can. It would definitely be not as "tox", if not "detox".
It looks and sounds wonderful as soup, but (and I mean this respectfully) how is it a detox? I mean, I drink V8 juice almost religiously, and it isn't classified as a detox, even though it is 100% veggie juice. Does the detox come through one of the other ingredients, besides the veggies?
Do you really need to fry the onion and the garlic at the begining? -.-' You basically ruined it. And what is special about it to be called detox? All the soups that are well made are detox... this one isn't btw...
So delicious! I swapped the pumpkin for Sweet Potato(to have with the squash). This soup soothed my soul!
works both ways, i like it blended for the texture, but you can eat it without blending just fine.

That soup does look very delicious. But I don't have a Vitamix. A regular blender would be fine though, right? Can't wait to give it a go!

Tara, don't you destroy the vitamins when you are cooking the veggies? Is it still healthy then or is it more like a low calory meal?

Ummm some measurements would be nice for those that are culinary challenged (ie me!)
Don't blow on it! The have an experiment at the Boston Science Museum that shows you that blowing on it actually slows down the cooling process.

I wouldn't bother boiling them. Raw veg are more nutritious. Besides, she has already roasted the hard veg, I would just simply blend it. Done!
