This week's Winner Dinners were so delicious. I love when I have a week full of things we can't wait to make again!

    15:45 Subbie Supper Intro Carol
    16:40 Carol's Texas Pot Roast
    CAROL'S TEXAS POT ROAST
2-4 lb Chuck roast cut into large pieces
1 packet Au Jus gravy mix
    1 packet brown gravy mix
1 medium onion, sliced or diced
4-5 celery stalks, sliced or diced
1 bag baby carrots (or 4-5 carrots, peeled and sliced)
    3 cups beef stock
    1 Tbsp minced garlic
1-2 Tbsp sriracha (depending on your liking)
    1 Tbsp celery salt
    1 Tbsp chicken fajita seasoning
1 Tbsp Dale's liquid steak seasoning
1 Tbsp Knorr Tomato Chicken Bouillon powder
    2 tsp white pepper
    1-2 tsp truffle salt
For extra flavor and spice you could also add 1 jalapeno, seeded and diced
Add all sliced veggies to the bottom of Instant Pot. In a mixing bowl, mix together all seasonings, gravy packets, sriracha, garlic and beef stock. Whisk well. Pour about half the liquid over the veggies and stir. Place roast pieces on top of your veggies and pour remaining sauce on top. Close lid, set to sealing and cook on high pressure for 1 hour. Once it's done, allow to naturally release pressure for 20 minutes before doing a quick release to release remaining pressure. Take about a 1/2 cup (or more) of liquid to make a gravy on the stove using cornstarch. Shred and serve over mashed potatoes with the gravy!

When making planks from a zucchini or other similar vegetable if you lay them down and after cutting the first plank roll it onto the new flat side. This allows much greater control for cutting the rest of the planks and also greatly reduces the chance of cutting yourself😊

In case you want to know why onions hurt your eyes. When you cut onions, they release a sulfur compound that converts to sulfuric acid when it hits the moisture in your eyes. That is temporary but painful. The goggles is the way to go.

Hi Mandy. I’m in love with your new porch and those flowers are so pretty! I accidentally made a recipe very similar to your taco tortellini recipe. It was a one pot stove top recipe, but I didn’t have the pasta they used so I used tortellini. It was so good! I have noticed that more You Tubers are starting to have their husbands join in as taste testers. I’m sorry but Steven is the best. I don’t know if someone already mentioned this, but when you are trying to make thin sliced zucchini or squash, lay them on there side and use your vegetable peeler to get even thin slices, then just keep repeating. It is a great way to get them even and a whole lot safer than using your knife. 😊

We made the pot roast and the flavor was really good! However, for anyone concerned about the salt content you can easily adjust it. I didn’t add the celery salt or the truffle salt or any other additional salt. And I used water instead of beef broth. We still found it too salty near the end so I added an additional cup of water to it and it was perfect. We used the leftovers for beef sandwiches on onion buns topped with provolone cheese. Thank you for the great recipes!

I just went through a few recent videos trying to find the Instant Pot Taco Tortellini casserole recipe. 🤣 I saw it before and thought that sounded good but forgot to get the recipe, I was too entertained by you guys! You always perk up my day.

Oh no!….Fresh herbs are much stronger than dried, especially oregano, rosemary and mint!…Use both sparingly in their fresh form unless the recipe calls specifically for fresh oregano, rosemary or mint!…
    Love your families videos!…

3 teaspoons of fresh herbs equal 1 teaspoon of dried. 😎

In most cases that’s the standard, however with strong (fresh picked) herbs such as oregano, rosemary and mint less is more!

Evaporated milk is also good in mashed potatoes.

Great video! Thanks for sharing. Btw, with a little practice you can actually make zucchini "ribbons" with your vegetable peeler, they'll come out much thinner than sliced, maybe to thin but then you could later them up.
