Soft and chewy on the inside, crisp and golden on the outside - these are the perfect coconut macaroons. As a coconut lover, I’ve tried dozens of recipes for coconut macaroons recipes over the years - be it for the holidays or for friends who eat gluten-free. These are my favorite. Chewy and moist on the inside, crisp and golden on the outside, they’re delicious plain but even more irresistible dipped in dark chocolate. They also keep well for days, making them the perfect treat to bake ahead or give away during the holidays.
RECIPE
HOT MELTED BUTTER 85 grm
Glucose syrup 1 1/2 teaspoon
Sugar 145 grm
Eggs 2 nos
Vanilla essence few drops
Very fine Designated coconut 210 grms

Just baked this afternoon and ohh my! This recipe is a keeper 😍 really easy to make and it taste good too! I reduced the sugar to 90g only as i dipped it in dark chocolate. Sweetness turned out just nice for my family and I ☺

I have made these about 10 times they are great!! Sometimes the batter comes out and when I scoop them they crumble then fall apart when baked. I’m am guessing it’s because maybe the batch of coconut I’m using is dryer then other times. Should I add more butter or eggs when the coconut is dry? Thanks again for this great recipe!!
Try using fine desigated coconut
Use hot butter while mixing and shape immediately

Skip the glucose the recipe will work or add honey instead

Recipe works without glucose . But you can use honey as a substitute 🙏
Can i bake them in silicone molds?
You can try ,but they are very easy to pipe or roll into balls by hand and bake
I have tried so many macaroon recipes, this one is perfect, thank you so much! I used corn syrup as I couldn't find glucose syrup is glucose syrup a lot better for this ?
It doesn’t make a big difference
You can even skip the glucose.
The glucose is just to keep the macaroons moist

Is it baked with both the rods onn?, I mean upper and the lower rod or only with lower rod onn?

You can do the re pie without glucose .
The glucose helps the macaroons to stay moist .

It didnt turn out crunchy on outside...even after keeping overnight..its soft ...any idea what went wrong
Add more time to bake.
Bake them golden brown. They are not suppose to be like crispy crispy. This ate soft bakes.

Grm is a measurement, use a weighing scale, and he does state the correct oven temperature in the video and in the description box.
