ShopRite Summer Grilling Meal

4th of July is around the corner, summer is officially here and you know what that means...it’s grilling season! I made this awesome meal with the help from my friends at ‪@ShopRiteStores‬ with their Bowl & Basket products, and it was a 10! Grilled pesto chicken sandwich with zesty sun-dried tomato aioli, peppery arugula & fresh mozzarella on toasted ciabatta, a delicious creamy coleslaw (with some chips on the side of course!) and had to finish it with my favorite dessert - chocolate chip ice cream sandwiches to round out the perfect summer feast.
Ingredients & recipe (all Bowl & Basket products)
Ciabatta
Chicken breast thinly sliced
Arugula
Beefsteak tomatoes
Fresh mozzarella
Sun-dried tomato pesto
Basil pesto
Mayo
Slaw mix
Italian dressing
Ranch dressing
S&P
EVOO
Lemon
For ice cream sandwiches
Cookies
Ice cream
Chocolate chips
1) Marinate chicken breasts in basil pesto for 20 minutes or overnight in the fridge
2) Dress coleslaw mix with equal parts Italian and Ranch dressing. Season with salt & pepper, put in fridge
3) Season chicken with salt & pepper and grill. Season ciabatta with EVOO and salt & pepper. Toast on top rack while chicken is grilling
4) Mix sun-dried tomato pesto with mayo to create an aioli
5) Dress arugula with EVOO, S&P, and a squeeze of lemon
6) Build the sandwich
Protip: Assemble cookie sandwiches and place in freezer until ready to serve
