Cacio e pepe corn
Cacio e pepe is always the right choice...so much so that it even works on your corn! Think Mexican street corn but with an Italian twist. Love this as a summer side dish. 🌽
6 ears of corn
2 cups of butter
Salt & LOTS of black pepper
Chopped parsley
Pecorino cheese
1. Season butter with salt & pepper. Melt the butter on the grill
2. Grill corn in husk until nice and charred. Let it cool. Peel away the husk
3. Gently brush with melted butter
4. In a big bowl, mix pecorino and black pepper
5. Let it rain and coat the corn with pecorino cheese
6. Garnish with chopped parsley. Serve & enjoy!

Hey friends! Try finding a grill brush without the steel bristles (scrub daddy makes a great one) the bristles come off and get lodged in the membrane of your throat, not fun! And happens more often than you think Happy grilling!

Braise the chicken without the onions, mushrooms and bacon then add them in for the last 10 - 15 minutes. They get rubbery if you cook them too long. And, why not reserve the red wine marinade and use it for the braising liquid?
I love this, but the grains should follow the filé top to end, so by cutting them diagonal is actually "incorrect" but in the end it matters not so much, its just more aesthetic anyway.

My first attempt was very dry and tough. I didn’t have a pan that could be put in the oven (rubber grips) so I covered the pan and let each side cook for about 8 minutes. My main take aways were: -I was afraid of undercooking so I over cooked. -I was very conservative with my seasoning and oil/butter. I did not have nearly as much oil in the pan as shown in this video.
Is it 400 or 500 degrees?
