You should pierce the yolks immediately after breaking your eggs into the egg rings. That allows the yolks to spread out / flatten and cook quickly. Otherwise your procedure is perfect.
Then he should have tiltled it egg breakfast sandwich. An egg mcmuffin, which he titled this video, implies he wants to show you how to make a homemade egg mcmuffin like mcdonalds. Mcdonalds lances their egg.right after cracking the egg into the metal ring on their griddle, just like the original poster suggested, so the egg cooks evenly, so hence he got that part wrong by not doing it, and not just because the poster wants him to conform, as you suggested.
Those mason jar lids look like they work way better than the silicone rings. They're actually smaller in diameter and thicker just like McDonald's. The silicone rings are too big in diameter and the eggs come out too thin.
I like that mason lid idea! I have been making my own egg mcmuffins at home, and the ring is the one thing I lacked. I highly recommend a brioche english muffin, like the Bays at Wal Mart. It is better than you can get at any restaurant! All good wishes.
Excellent. I had a delicious sausage mcmuffin with egg a few days ago and have since been wondering if I needed to buy something to duplicate them. I worked at McD as a teen, and that doodad they have is probably $200, but they used a bit of water. Other YT videos do not, and I think the egg needs that moisture as I hate an egg that gets browned. Yuck! Very good!! I have dozens of canning rings. Woop woop!! 😃
I start by putting the muffin in the toaster frozen, when it comes out...hit it again and then take a knife (its really HOT) and cut open the muffin, i have been eating these for years...just frying 2 eggs in olive oil, flipping them, turn off the stove...( I like my egg over easy and running a little) adding half a piece of American cheese to the top of the egg to melt it (my contribution to weight control)...they are wonderful with a good quality bread...I can't tell much of a difference and you can add bacon, sausage....bon appetit. Great idea with the mason jar lids.
Though the method has changed over the years, water was not used, the egg yolks were immediately broken and a metal lid placed over the egg rings. Now, the first restaurant where egg mcmuffins were invented, has a special lid with a cup on it in which water was poured in to drip onto the grill beneath but the steam produced didn't really make a difference. One interesting thing is that cooking egg mcmuffins on the six connected egg rings resulted in you becoming good at cracking and emptying two eggs per hand at the same time, a teenage skill In have since lost.

i just spray some butter flavored Pam in a small Rubbermaid bowl, and cover them, and pierce the yolk with a small hole. after 1 minute with 2 eggs in the microwave, i have 2 perfect eggs for waffle sandwiches.
The secret is a well seasoned pan, medium temperature, and to turn the eggs before they are burned. Medium heat allows the egg to more thoroughly cook, on the first side, before it's flipped to the second side. Hope this helps.

No, a well seasoned cast iron skillet is not harmed by the water. The key is to quickly cleanup the skillet afterwards. Letting water stand in the pan for a long period of time (as in letting it soak) can harm the seasoning. More so, on a poorly or newly seasoned pan.

You can use empty tuna cans also. I use them to cook round eggs in an air fryer, or in a skillet surrounded by boiling water to steam the eggs solid
