Honestly we have an awesome food system in this region. So freaking many people putting in the work to maintain old ways and to bring in new ideas. We have what we need to feed people well around here. No need to reinvent the wheel, just scale it up.
People from more rural areas were expressing more serious concerns about capacity issues. But honestly I can see all Wisconsin's lake cities becoming intensely desirable, especially as their winter lows are projected to become pretty locally mild. There's definitely a bigger bank of services available towards Milwaukee, though, that is true
Big issue in many areas with strong outlooks!!! This is one of the reasons I favor Iowa, actually. It's extremely easy to start a business here. I think we will have an easier time meeting the needs of an expanding population because it is a great state for small business.

And when corporations start buying up land, it’s going to get a lot rougher. People keep saying, “but it’s so cold! And Snow (the S word)!” And I kind of half-heartedly mumble something about climate change and such, but don’t try very hard to convince them it’s going to be the place to be.
The sense I get is that most people in WI who are aware of their potential (which seems to be a lot of folks) are also aware of the threat of big corporate buy-up of property. I hope your state government can get some structure in there to keep your communities locally owned.
