Very interesting that I just found your video as I recently bought a set of the rectangle templates! I love handwork as that’s what I was taught way back in 1979 when quilt shops taught hand stitching period - no machines till sewing on the border, and then hand stitching the border to finish! Now I need to get a set of the square templates!!!
You can whipstitch together by hand using or you can use a small zigzag stitch on your machine. Use a fine polyester thread that matches the backing fabric.
“Appliqué” is not the right term! True appliqué has an entirely different meaning. Your “appliqué” is simply hand stitching - big difference! But thanks for the neat idea. I do English Paper piecing and this is much easier - especially with these large pieces. I saw a video recently by an English woman who makes gorgeous 1/4” hexies! Can you imagine?!

Try it - it should be okay as long as you get good folds.
