- Keihan is chicken soup over rice with various toppings, and it is a local dish in Amami Oshima, Kagoshima Prefecture. The chicken broth is so delicious and the toppings will delight your taste buds!
How to make Keihan

(2 people) Cook Time: 30 minutes
1 Chicken Breast, skinless
600ml Water (2.54 cups)
Green part of a Long Green Onion
3 slices of Ginger Root
2 tbsp Sake
1/2 tsp Salt
3 Shiitake Fukumeni, rehydrated mushrooms simmered in broth

A pinch of Salt
3 Spring Onion Leaves, chopped
Toasted Nori Seaweed, shredded
Yuzukosho, yuzu citrus chili paste, optional
A dash of Soy Sauce
Salt
Fresh Steamed Rice
1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml

YES! I emailed Chef maybe 3 years ago requesting her to make keihan. I fell in love with it ever since I first tried it while living in Kagoshima. I highly doubt she made this video because of my email request, but I still feel happy that it could be a possibility that she did (even if the possibility is very tiny).

I’ve always loved this channel so much 😭
I love Keihan. I fix mine a little different than you do. Instead of seaweed I add red ginger from Japan. The Shiitakes and the red ginger makes my Keihan.
I add one TBSP of sugar, 1 TBSP of soy sauce to the broth/ re-hydrated sliced shiitakes and boil down until there is hardly no juice left giving them a sweet and delicious flavor. As for the egg omelet I do that a bit different too. I add a teaspoon of potato starch to a small amount of water mixing until it is dissolved and than add it to my salted scrambled eggs, mixing them good. Then I pour them in the pan and fry like you do.
I like a richer tasting broth so I cook a Cornish game hen along with salt, green onions and fresh ginger in my crock pot overnight and use the white meat only for my Keihan. I eat the legs, wings and back the next day.
The down side however is all of those dirty dishes and a bit time consuming. But it is worth it.
With the cooked rice I have left over I make a Japanese breakfast the next day. Delicious.
I like to check out various ways Keihan is fix though I will absolutely stick to the way I fix my Keihan. Great video. I enjoyed watching it.
