It'll be fun to stretch the dango! (^^) Chef visited Oita Prefecture, Kyushu last year and her friend taught her this local dish, Dango-jiru. Alternatively, sliced pork is used instead of chicken or the broth is seasoned with soy sauce instead of miso. Konnyaku or konjac is also a popular ingredient in this recipe. You can add yuzukosho, yuzu citrus chili paste or shichimi, mixed chili powder to taste! だんごを伸ばすのはとっても楽しいですよ!(^^) 昨年大分に行った時に友達に郷土料理のだんご汁教わりました。鶏肉の代わりに豚肉を入れたり、味噌の代わり醤油で味付けする場合もあります。またコンニャクもよく使います。お好みで柚子胡椒や七味唐辛子を加えてください!
Oosee Oosee if you cant you could try doing it with cabbage, potato, chicken, and use soy sauce and use fish sauce its not the same flavor but i think its one way to try it
in Turkey we also say "like your earlobe" to describe the ideal softness of a dough...never knew that it was the same in Japan..i'm really surprised :D

Here in the Southern US they make similar noodles. They are rolled and cut the same width as yours. They are cooked in thickened chicken soup and are called dumplings.

I like when you show the process of cutting all the ingridients you need. Not when you show a few and at the end you have another batch of veggies that you prepared already.

いつも楽しく拝見しております!今回は大分出身の私には懐かしい料理でした。地元では醤油味のものもあり「ほうちょう汁」の名で給食にも出てましたよ。このだんごはぜんざいに入れてもプルプルとした食感と微かな塩味がマッチして美味しいんです~。夏はそのぜんざいを冷蔵庫で冷やして食べてましたー。ああ、懐かしい!
