Master Sushi Chef Hiroyuki Terada shows you how to make this amazing delicious Chinese inspired dish, Lobster Cantonese. Maine lobsters can be found anywhere but in the worst case, if you can't find it you can use frozen lobster tails or even shrimp. We chose to use a fresh 3 pound Maine lobster for it's succulent sweet meat.
Our ingredients are very easy to find:
Soy Sauce
Fresh Ginger
Fresh Scallions
Butter
Garlic
Honey
Sambal (chilli)
The hardest part may be dispatching a live lobster but if you follow our suggestion in this video by beginning at the very top of its' head and cutting straight down, this should be the "most" humane way. In our other video, we showed another way to dispatch a lobster by cutting the heart first; we were met with extreme hate and scathing comments, but we still stand by our original way.
The rest of the world throws live lobsters into a large vat of boiling water so honestly, there's more than one way to dispatch a lobster.
We hope you find this video helpful and inspiring and that you'll try this recipe at home with a delicious lobster or another type of fresh shell fish.

The reason its done this way is so the entire nervous system is destroyed in one cut. To cause as little pain/discomfort and to kill the animal as humanely as possible.
Crustaceans are VERY intelligent, and we know they can feel pain and remember things, like how to avoid pain. Its believed they are about as intelligent as dogs.

for those that are unaware, this lobster was dead millisecond the knife pierced the shell. According to a neurologist i talked to, the involentary movement is due to the brain no longer being able to control the nerves. Since for a short time there is still blood in the muscles thus oxygen, the nerves still fire. The hindbrain and spinal cord and nerves are constantly trying to fire and move, the brain stops these flares kind of like electricity always flowing through an outlet with our without an appliance using it. The instantanious expiration of the lobster causes these nerves to do what the brain was stopping them from doing. this is how you can shoot a rabbit in the heart and it'll run fall and die and then no movement, but if you hit the head it flops all around.
also lobsters are essentially a cockroch. if you can stomp a cockroach but not see a lobster get killed in the most humane possible way (sticking it in boiling water or steam is way slower) then your a hypocrite...

Well look at it this way:
If a human were "dispatched" through any of these methods, it would be seen as extremely brutal and barbaric. Just take a knife and shove it in the back of a person's skull and split it open to the front. Then proceed to splitting them in half with the same knife. You'll hear the same cracking noise, see the same guts, and so forth. It's very unsettling to many people.
If it's unsettling, then don't watch the video
For those of you who think this is cruel, Hiro does this in a very humane and quick way and he is very experienced in this. I love his videos.

This lobster is what my mom would call "maki die dead". I think my grandfather used to make lobster like this (he was Cantonese), so seeing this brings me back. I also appreciate that you showed how the lobster gets killed; as some pointed out in the comments, this is actually a quick and painless way for them to die and the twitching is just some leftover involuntary muscle movement, like what a lizard's tail does after you kill it.

M’y sister in law taught me how to make the south Shenzhen version of this. It’s pretty similar but OMG is it delicious!
To clear some things up about the "guts" inside.
The dark green part is the "roe" of the lobster it is totally edible but I have never tried it and
The yellow green part is the tomalley and is a really good part of the lobster. It can be eaten alone and is usually considered a delicacy. It has a soft buttery texture with a sweet and salty flavor. If you eat crab and in the inside you see yellow/orange matter, it is the tomalley and is really good.
Here is a informative post on the "guts" of the lobster
- The dark green stuff found inside female lobsters is the unfertilised roe (often called coral). This turns beautiful bright orangey red when cooked, with a waxy texture but nice flavour
- This stuff is not to be found in male lobsters (obviously because eggs come from the female right?)
- The tomalley is the liver/pancreas and can be found in the head of both sexes and is a pale brown colour that does not change colour when cooked. This stuff is truly delicious.

My Chinese wife wanted "Chinese lobster" for her birthday. Being Mexican, I had now idea what that was, until searched it on TH-cam. I varied your recipe a little. I used a Chinese cooking wine instead of saki, I did not use soy sauce, and I did not add honey. I used two woks, one to fry the lobster and the second to cook everything in. She was happy with the results. Thanks Hiro for helping me make an amazing birthday lunch. I do have one question...When did you add the honey? I would love to try your recipe.
