Thank you! So to make mai buihuk, just mix teff flour (2 table spoon) with 1/2 cup of water and let it stay for 3 days, thats about it, you now have mai buihuk.
I set it to max (445F) to get it ready and going, after that I just start making the injera continuously without setting the mitad any lower. I recommend not to get busy with other work while making injera.

It could be due to the starter (mai buihuq). You should only use small amount. And also make sure the mix does not stay more than 24 hours before you bake it, quinoa ferments quicker. I made my injera in two days but the total hours is about 24. (Make mix at 6pm first day and bake it second day at same time)

I am in Canada, teff is usually found in habesha stores, quinoa you can find in Costco or many other big groceries like walmart. Quinoa price depends where you buy it, its better to check at different stores to compare.
You can use teff flour or other flours you wish to use for your injera Step 1 Mix 2 table spoon of flour with 3 table spoon of water Let it stay over night (At room temprature) Step 2 (day 2) You will see your mix creating bubbles, means its fermenting Add 2 table spoon of flour with 3 table spoon of water to the mix, stir it well Let it stay over night Step 3 (day 3) Now its all done You can use it to make your injera now Use small amount as seen in my video
It really depends on the brand, In this case I set it to 400F and quickly made all injera without decreasing the heat, I have started to use a new different brand megogo now and it behaves differently. You will need to experiment on that if you are using a new megogo for the first time. I hope this helps 🙏🏼
Ersho (also called "starter" in english) is made by mixing 1/2 cup of Teff flour and 1/2 cup of water in a clean container (cover with paper towel) and then let it stay for 48 hours. After 48 hours it will ferment and is ready to use. Thanks for watching : )
