They can be so very different! In my book, you are absolutely right to use butter with mushrooms. The perfect match! If you have just a few mushrooms: butter, some salt at the very end. Nothing else. To learn about the specific taste. That is, when you can start "experimenting" with them. Like putting the next batch inside a grilled cheese sandwich. Just my 2 cents. Obviously you don’t want to burn them onto the pan, but I think he’s saying to let them start to stick to the pan and get those slightly crispy bits going before you stir them up too much (otherwise they’ll get soft and mushy but with no browned bits)!
I think if you like marmite with pasta, you'll love this. And even if you don't like marmite pasta, you'll love this pasta. In Japan, we have butter soy flavored popcorn (バター醤油) or crisps for sale, and they're very moreish. Also, butter soy pasta is definitely a thing, too.

I'm going to make this but my husband is not good at handling really spicy food. Would the one chili pepper make this dish really spicy for someone who doesn't eat a lot of spicy food? I've built up his spice tolerance a little bit over the years but the most he seems to be able to handle is a pablano, lol I was thinking I'd add a pinch of red pepper flakes instead but am worried I'll be missing out on a key flavor in the dish...
You can substitute the chilli with chilli flakes. Chilli flakes are milder and less spicy. The key flavor is garlic and spring onion. Back in the day he didn't use chilli, so it's fine

How can 250g of pasta be enough for 4 people? It should be 400! 250 is a slightly bigger portion for 2! Besides that, I love the recipe :)
